Andy Baraghani loves Thai food, especially the flavors of the northeastern region of Isan. Fish sauce, lime, chilis amongst others make the cuisine distinct, but what does it take to cook Isan Thai food? We sent Andy to Somtum Der in New York's East Village to explore the pillars of Thai cooking. Join him to learn about Isan spices, how to make perfect Thai fried chicken, coconut sticky rice and so much more.

What's funny is that Pad Thai isn't even really Thai. It's a Chinese dish that was promoted by a military strongman to promote an alternative to rice. I wish they would have made a snakehead dish, great fish

@Leon Leo in europe every food is more authentic. It's because americans are not too adventurous with food so you start getting all those american versions because the restaurants have to adapt. Even coffee is sugary in the US. Also when I was there I couldn't find proper chocolate. :D
@henkkaa88
@henkkaa88 4 жыл бұрын
Also I noticed in the grocery store you could never buy the cheapest option because it was always something that was crazy fake. Like cheapest bread was this sugary bleached white bread that had a very long shelf life. Cheapest cheese is this plasticcy square cheese which im okay in cheap hamburgers but nowhere else. :D so you had to be careful not to buy crap. Usa should have more regulations because children shouldn't eat things like that.

@@henkkaa88 the reason why america doesnt really have "authentic food", other than stuff like barbeque, is because unless you look at Native American cuisine, there is no real American food, as the country was started by European immigrants. Southern food is inspired by peasant food, and stuff like cajun is a mix of french and native cuisine. Also, yes we have a ton of cheap food, but there is also a ton of good food if you go to places like farmers markets or specialty stores. Only people who cannot afford much or are ignorant to proper nutrition eat garbage. Chocolate wise, cheap chocolate like Hersheys isn't something we even eat all the time, it's mostly when you feel nostalgic or want to make some s'mores. I'm not trying to say your entirely wrong, but I think you should put more research into American cuisine before making a comment on a place you've only visited and done little research on.

I LOVE this series. Andy is inquisitive without being condescending. He's knowledgeable and doesn't talk over the experts. He's down to try anything without making faces at food he's unfamiliar with. So many other people who hosts shows like this fall into those faults but Andy is a wonderful host that you can tell is really interested and respectful towards the food and the experts which is, sadly, enormously refreshing. I hope this series goes on for a long time, I learn so much and enjoy it a lot.

Just one time: Chris makes something fermented. Brad tries Gourmet Makes. Claire does mystery treasure hunt. Molly learns how to cook an international cuisine. Andy tries to blindly reverse engineer a dish. Delany explores every way to cook a food. Amiel instructs a guest through a dish back-to-back. Carla tries one of everything on the menu at a restaurant. Bon Appétit starts branding all these series with official names. Rhoda marries me.

Actually, in the past of Thailand, women tends to have more experience in kitchen than men as she have to cook for their husband, children, and probably parents-in-law as they have to move to their husband’s house. It’s not surprising that women can be owners/managers of the restaurant because they know what to buy, what to do, and what to serve.

Andy! Can you please try learning how to cook Indonesian food? Indonesian food is so incredibly diverse by the region. Especially try cooking Balinese, Lombok, Manado or Padang food as these are some of the spiciest food you will have ever tasted.

But that was after he put too much force while cutting the fired chicken dropping it on the floor. He looks strong but the key is getting the pressure right.

29:40 hands down favorite part of the episode cuz the food-geek-out over not being able to identify what it tastes like and gets others involved! Relatable. 😍

I worked in a thai restaurant about 3 years ago. It was so fun being there and I rmb one day the chefs did an Isan cuisine lunch for the staff. It was the eye opening for me, the first time I ever had Isan food. It was so spicy, sour and the sticky rice was a great counter with the dishes. I also miss the days of eating the eggplant with a shrimp paste, chili & fish sauce dip. So lovely.

There is an amazing Thai place by my house that makes a handful of "chinese" dishes, one of which is sesame chicken. But I always wondered why the texture and breading on it was so unqiue... seeing this video it all makes so much sense.

Is it just me or this restaraunt is a standout. Look at the use of many exotic (to american tastes) ingredients and cooking techniques. Fried garlic and duck skin in that spicy/vinger with rice? That fried chicken? Holy smokes
