Heart is actually one of my favorite things to eat... although I eat it very rarely. Chicken and Deer heart are my all time faves, but I've tried; Chicken, Cornish Game Hen, Turkey, Pheasant, Goose, Duck, Deer and Elk heart. I honestly don't know if I've tried Pork or Cow heart (I'm pretty sure I must have), but I have had Cow tongue a very long time ago.

Yup. At deer or elk camp, the heart is the first thing we cook up. And last year I helped a friend process a bunch of turkeys and nobody wanted the livers or hearts except me. They were some of the best liver and onions ever. Also I used to be a trapper in Alaska once upon a time and ate the heart of a wolverine.
