3 days of happiness was the second manga I've ever read, I finished it one night and I couldn't sleep afterwards, I read again the next day and I start tearing, it is my favourite manga and it has affected me deeply. Hearing you mention it brought back my memories of that experience Also AoT and 86 are my two favourite shows

Also I will probably adopt your idea of counting individual 10/10 seasons as their own masterpieces because there are quite a few anime that I have felt particularly attached to, however because either the series not being finished (86) or not be as good later on (psycho pass), I would argue them out of my 10/10s or favourite shows list.

Legitimately facts, Vinland II gets a lot of hate for it being boring but it provides so much depth to each character to an extent that other anime/manga haven't done really before. Mob II is perfect but honestly i would say that the entire series was perfect in my opinion.

I'll keep it to series to be concise, but my 10s would be; Space Dandy Mob Psycho Kaguya-Sama FLCL Paranoia Agent Evangelion Baccano Monogatari SS & Bake (might be the whole series upon rewatch. It's so good) Frieren Vinland Saga S2 AOT Finale Part II* (I admittedly have my issues with a certain parts of the show, and may have a few issues with even the finale, but it did the two things I was begging to happen in the anime; fix that exchange between Armin and Eren, and, most importantly, bring Arifumi Imai back. That's all I needed to love it)

My absolute favourites are Aot and Vinland saga, i believe literally anyone can enjoy them and they are actually worthy enough to be called a "Masterpiece." Also i am currently reading Mushoku tensei novels, i think the anime is very good but the novels are just next level. Yeah but can't really say "anyone can enjoy them" for obvious reasons... 😅
