Best way to reduce the heat of the hot chili oils in chili peppers is (in order of decreasing effectiveness) is to chew a) a ball of cooked sticky rice, b) a mouthful of cooked long grain rice or c) bread, preferably a dense type of bread (knead it into a dry ball). Work the mouthful of one of these all around the inside of your mouth (cheeks, tongue, roof of mouth). Swallow the rice/bread. Repeat if necessary, but one go usually does the trick. Drinking water (hot or ice cold) or water-based drink will make things much worse, as it spreads those hot tiny globules of chili oil all around your mouth. Eat another of THOSE chilies and try this out! Acquisition of this antidote skill will raise your Elo 50 points, guaranteed.

Top tip. Never try to drink milk to null hot food. It has the reverse effect.

That's true for water - it just spreads the capsaicin around your mouth. But the casein protein in dairy products helps break it down (and any other acidic drink like lemonade or tomato juice help too since it's alkaline)
