The reason: seeds & nuts have Phytin acid. Oats as well. This acid keeps the nutrients - till the seed become a plant 🤓. So you mimik the wet ground with makeing them wet -> soaking over night. Rinse in the morning -> clearing off the Phytin acid. This is for all seeds, beans, nuts etc. All. If they're heated up already at factory while processing for the groceries, this releasing of the Phytin acid is not possible anymore. So watch out for raw oats. In Germany it's called " Nackthafer ". In the states I don't know.

If you eat your oats with fibre and protein or fat it slows down digestion. I never cook my oats. I make overnight oats. 1/2 cup oats, 1/2 cup coconut milk, 2 heaping tbsp full fat Greek yogurt, 1 tbsp 100% peanut butter, some berries and a few raw nuts. Very filling and the fibre from the whole fruit, the protein and fat from the Greek yogurt and peanut butter prevents glucose spikes. It's not only about carbs ....it's how you eat your carbs. Any straight carbs... especially on an empty stomach will spike your glucose levels. There is a lot of nutrition in carbs. You just need to learn how to pair them with other foods to lower the glucose spikes 😊

Try what I do: I cook enough oats for 6 servings (hubby and me 3 breakfasts.) I add a chopped apple, a handful or raisins or chopped dates, PLUS after cooking, I stir in 6 tablespoons ground flax and some chopped walnuts. eat one serving, the rest goes in fridge. when you add flax you increase fiber and omega 3. refrigerating the rest converts the starch to resistant starch which lowers glycemic index, just reheat in microwave. We don't add any sugar or sweetener when we eat this. no issues with blood sugars, be mindful that a serving is a lot less than you think (1/3 cup raw, is approx 2/3 cup cooked.)
