I’m from cream of wheat part of the world, Eastern Europe. We do it differently, put cold milk into the pot (or half milk/half water), add the ground grain, salt, put it on the fire, stir while it’s slowly coming to boil, when it’s boiling reduce heat and keep it almost simmering for a few more seconds. Boom done. Try to cook it with milk. It’s a 100 times better, I should know, coming from the porridge world I grew up in.

I am American, and my family also only made Cream of Wheat the way you described with milk instead of water. We add cinnamon, sugar/maple syrup, vanilla extract and butter.

I love this. Wheatmeal porridge was the staple diet of the Roman army in ancient times. At meal times, they would forms groups of six men who would use a Roman quern, a hand turned grain mill to make their semolina porridge. The SAMAP Model 220 Manual Stone Grain Mill / Grinder is an outrageously expensive hi-tech version of it. Roman quern style hand turned grain mills can be purchased for a few dollars in some Asian countries in the marketplace, sadly not online. The Romans introduced herbs to Britain like thyme, parsley, rosemary etc. If I ever get to travel to India again, I will carry one home in my luggage, even if it the only item due to the weight of the stones. Cream of Wheat is a semolina grind, not a fine flour grind.

Setting 10 on the mock lmill works perfectly, mine take 6 min to cook at that setting. And I put golden Monkfruit and heavy cream on mine!

Hi Felicia. I am new at milling my own flour and is a little intimidating and overwhelming. I am the type of person that wants to know everything. So the more videos I watch the more overwhelm I get. Thanks to your videos I am learning to take it step by step and learn one thing a a time. Love your idea to have a measuring cup inside the bowl. That is helpful not to grind too much flour. Loved your Ezequiel bread video. You are such a blessing to us that want to learn. God bless you and your family.

Welcome to the milling world! Don't be overwhelmed. Just take it one step at a time. First - grain mill. Second - get some grain. Third - master ONE recipe. Just focus on one and go from there. TIP: I did a lot of reading on milling and hot cereal a few years back, and I have some well tested tips for both milling and hot cereal for people to try. 1) Milling: Commercial grinds intended for hot cereal (ex: farina, cream of wheat, wheatena, et al) all have a specific range of med to med-fine particle sizes chosen to not only prevent clumping and pourability, but reduce splattering/sticking/scorching during cooking, enhance mouthfeel, and increase shelf life. What they do in a commercial mill is to sieve grist into coarse med fine and x.fine, each of which have their culinary uses ... they pull off what they need at each step of the way, and regrind the rest finer and finer with the last stop being fine flour. Nearly all grinds intended for hot cereal are taken off at the med to med-fine stage of a commercial progressive mill making bolted flour. Replicating the "bracketing" of particle sizes in commercial hot cereals is fairly easy at home. The max particle size is done by setting the grind on your mill - partivles larger than that will keep getting ground until small enough to drop thru. The result is a spectrum of smaller particles of various sizes and flour. I have a kitchenaid grain mill attachment with 12 settings ... I like to set mine for 10/12 here. Now, here's the key step for making really good easy cooking grit for hot cereal ... you need to sieve the result (currently a med fine wholemeal mix of grit and flour) to separate off the flour, so you can reserve the latter for further grinding for use in baking and breadmaking. Why ? If you leave the flour in you're likely to get clumping, splattering and scorching and a hot cereal thats closer to a gritty cake batter consistency. I know, because ive done it. I recommend a sieve of about #40 mesh to capture grit (for hot cereal) - the finer stuff that passes thru can be reground on your finest setting for flour. Anway, a setting of 10/12 on my mill, and a #40 mesh sieve, give me perfect grit for hot cereal. For porridge, I like 4 parts boiling liquid (either 50:50 water & milk, or just water) to 1 part grit, by volume. Whisk in off the heat, then return to a gentle boil, whisking periodically, for 6 mins, and done. Garnish/sweeten to taste ... I like to whisk in a little stevia and a spoonful of creamy peanut butter, followed by a few golden raisins and crumbled walnuts. Sometimes just a splash of cream. Cheers.

Tip: for wheatena, pantoast the grit over med heat for several mins until toasty aromatic and a slight color change just begins to appear ... THEN make your porridge. My wife is a wheatena junkie, but I like my kamut grit untoasted.

We ate cracked wheat cereal and whole cooked wheat back in my childhood. I fed my children cracked 10 grain mix and something we called “bear mush.” I will be making this for myself and 😂visiting grandchildren.

I made the cream of wheat this morning using my mockmill to grind the wheat. It was delicious! So much better than store bought. I also love how quick it is. I can make this in the morning before I go to work and be out the door on time

I use a mixture of several different grains. Hard white wheat, spelt, einkorn, really any grain. I put them in pan and dry roast them. You have to stay with them and move them around like popcorn until they're fragrant. Then add your water and cook to your preference, I like them al dente, then add extras like you showed. @@karenallen1730 I leave them whole. The texture isn't anything like cream of wheat. I don't know how to explain it except to say it's "toothy" but that makes it sound weird. It isn't though

If you changed your mind and decided you wanted flour instead of the cream of wheat can you grind it again into a finer texture to make regular flour

Wow, wow, wow!!! Can't thank you enough for this. I liked cream of wheat as a kid, but never saw it homemade....just the packets from the store. As an adult, I wanted some at one point and bought the packets and thought it was gross. I knew when I saw this I had to try it with my Kamut! Wanted to get my grandkids to eat this and they are getting to the age they are starting to get picky. So I added plenty of coconut palm sugar & honey. The honey was soooooo good in it! Also added cinnamon and stirred in some sugar free jam; added butter and fruit on top. The kids LOVED it and so did I!!!! My granddaughter said she loved how it made her tummy warm! It's easy, quick, very nutritional, cheap and we all like it.....win, win, win!! Next time we're gonna try some cacao in it with bananas & nuts. Also, truly an emergency food. We have tons of wheat, salt, honey & dried fruit stored. So this is something we can always eat no matter what.

I am a new mill owner and enthusiast- trying to find a healthier and simpler way of life for myself and my family. I was very excited to find your channel. I was working on mastering bread - I had never been successful until I got my Nutrimill Classic and Bosch Universal just last week and I can’t even tell you how much bread and pizza crust and dinner rolls I’ve made already And that have been SUCCESSFUL thanks to your channel. I was super excited to stumble upon this last night!! I knew my Nutrimill classic would grind IT to fine for what my husband and granddaughter would want for their Malt O Meal/ cream of wheat- and you mentioned COFFEE GRINDER!! Got off work today and we made French toast with homemade wheat bread and eggs straight from the coop- and when my granddaughter went for her nap I cleaned out my coffee grinder and gave it awhirl. Oh my goodness. With the same additions we add to the store bought - this is 10x better!! SO GOOD! MY husband and granddaughter got it as an after nap snack and loved it. And so easy. Really- the same as making it from the box once you got your wheat berries ground up. Thank you for all your videos! I milled mine to close to flour consistency. But the taste was still decent. A little hint of flour. Next time I will shoot for courser. It's just learning my Nutrimill.

We love cream of wheat at my house if you add salt to oats and cream of wheat you can use way less sweetener because the salt pops the flavor. I love salted butter in mine with brown sugar. I also love cracked wheat with cream

I've found when I make store bought cream of wheat, (because I haven't milled my own grain) I add the wheat to the water before it boils and that way it doesn't clump like it does when you add it to the boiling water. What are your thoughts on doing it that way?

We put whole berries in crockpot (1 to 3 ratio) and cook overnight. Wake up to hot wheat cereal. Any leftovers can be mashed a bit and added to meatloaf, meatballs, etc. Also good cold as salad topping.

Watched your video and made this tonight for supper, soooo good, my husband wanted raisins, brown sugar and cinnamon in his bowl along with a splash of fresh raw milk and a dollop of butter, I had peaches and cream along with brown sugar and a dollop of butter, the peaches were canned last summer from our peach tree. This was just so delicious. Thank you

We eat grits all the time. We will have to try the cream of wheat. Just signed up for your membership. We have been stocking up on grains over the last couple years. It will be nice to learn different way to use them. Looking forward to checking out your course. 📓🤓Congratulations on launching!! 📖🥳

As a kid we used to have hot cereals at home made by my mom or grandma, I was so lucky and one of them was very often cream of wheat. Today i still make it for myself and i freeze raspberries when in season and ripe and when making my cream of wheat (i add maple syrup, im canadian to the cream of wheat while cooking) i take about 4 raspberries and crush them in between my fingers into the bottom of the bowl ill be putting my cream of wheat into, add cream of wheat and then another 4-5 frozen raspberries on top, its like they are still fresh cuz u put them on frozen, yum....

When milling you have to be careful not to heat the grain to preserve nutrients. What about when you cook it? Also just ordered my mill and I thank you for all the info you give.

Just be sure to mill regularly. Time is what decreases the nutritional value, not cooking.

I add a pat of butter to the boiling water before adding the cream of wheat to help keep the chance of lumps lower.

Can you do a video on grits from whole corn kernels. I grew dent corn and ground it with hand crank burr mill and boiled it and let simmer and sit. Came out creamy but the pericarp flakes kinda messed up the grits. I think I need to nixtamalize the corn to dissolve pericarp and then grind. Nixtamalized grits will be healthier anyways. Just more involved.

@@tiggywinkle7522 glad you saw the comment snd could learn from my mistake. nixatamalized grits is the way to go in my opinion. Really the pericarp is what makes grits gritty and I dont really see a need for grittyness in my food :)

I was thinking about grinding a wks worth for just the 2 of us & placing it in the fridge. The grinder makes too much noise for that early in am. Would that work?

Congratulations on you new course!!!🎉 We used to have a gentleman in our area who produced wheathearts, a hot cereal which I loved as a child. After he passed away it was no longer avaliable. Do you know where we could find these or how to make this item? Again Congratulations & Best Wishes!

I did a brief Google search about wheat hearts and from what I can tell it was a hot cereal made predominately of wheat germ. I would just keep it simple and make this cream of wheat from freshly milled wheat that contains plenty of wheat germ!

Cream of Wheat with butter tastes like WAY over cooked pasta to me, since my family always added butter to our pasta after straining to keep it from sticking. All I've ever done with CoW was add a super thin layer of sugar to the top, eat off that layer & repeat, maybe use 6 teaspoons of sugar for 6 dry tablespoon CoW I used when making it for myself ... but adding the sugar as I'm eating it for that sweet crunch.

Felicia, most fresh milled wheat bread recipes make two or more loaves. I tried halving a recipefor one loaf and it was a failure. Do you have a recipe for one loaf at a time?

Love the measuring cup hack! We like vanilla, almond extract, butter and sweetener in ours. I need to add fruit to it as we do oatmeal. We also like to do a cocoa wheats version every now and then.

Sort of off topic but I want to mill corn, with my Wondermill, for making cornbread. I know I can mill popcorn and dent corn but can I mill sweet organic corn that I have dehydrated? It is very dry and hard.
