@@GoTraveler As a die-hard Bourdain fan I cannot thank you enough for posting these upscaled videos. I have the entire Cook's Tour collection on DVD but I think they're only 480p. This is just such an important thing you're doing, IMHO. This old Bourdain stuff is a true treasure.

This was entirely new to Americans at the time, wasn't it? I mean, travel in Vietnam, the food. Tony even pronounces the famous pho incorrectly. It was all still so new. I remember watching this with my wife, who was a huge fan of Food Network. She found Tony off-putting at first - too New York, too hipster, whatever - but she came around soon enough. I remember us agreeing, Vietnam looks amazing. It was still unknown to most of us.

He really did make an excellent point about how western culture doesn't give a second thought about eating oysters, clams, lobsters etc. So what is so gross about eating grubs and snakes?

I think that's why we love Bourdain, his logical and unbiased comparison of Eastern and Western culinary cultures - like when he said expensive food in the west is someone famous putting a special sauce on an ordinary thing.

He talks of our system...it wasn't mine. I grew up on a farm. After married more than half of the meat on my table was brought in with either my 16 gage or my husband's 12 guage...or the end of a rod and reel. But I really get a kick out of watching someone that has always had his meat and dairy products delivered to his business, home or market..
