Those rats reminded me of something I read a while back. Back when Vietnam was a French colony, in order to combat the large amount of rats in the area, the French offered a bounty for every rat caught and killed. What ended up happening is that the locals started breeding rats for money. It's a good example of an incentive based solution becoming counter productive.

The English did that in India with cobras in Delhi because too many people were being bitten but it was too successful so people started breeding them in their homes. Once the English caught on to what was happening they cancelled the bounty scheme so everyone just let all of their cobra's go back into the city which caused a bigger problem than it was originally.

It was the USA whose troops were burning, killing and raping in Vietnam. Very few Vietnamese fought for the puppet South Vietnamese army ARVN. In fact it is a matter of record that many of those who went to ARVN for training then deserted to join the liberation forces. The USA poured more bombs on Vietnam than were used by both sides during WWII. Agent Orange sprayed to defoliate the forest is still up to now responsible for Vietnamese babies born with hydrocephalous. And this is what barbaric America did to only one country. If you travelled, you would find that most people in the world view the USA as a nation of 'cannibals. The Vietnamese successfully and successively fought the French, the Japanese, the French again, the USA, the Khmer Rouge and China. They have now rebuilt their economy under very difficult conditions. And they execute cheating bankers. And yes, I am white. But I do not allow the accident of skin colour to affect the functioning of my brain.

Yep, I would almost always go for street food rather than restaurant food. You can see it being prepared, it is sold in bulk (so nothing sits around for long), the opposite is true in restaurants. Also street food is usually bloody delicious (if you specialize in cooking just one thing, it seems you can get very good at it).

Thịt chuột is easily one of my favorite Vietnamese meats. I would 100% choose it over chicken. Ốc is another favorite. I can't agree with Andrew. That cheese (they use skinny cow cheese), goes really well with shellfish, surprisingly. Saigon is a place that is so easy to fall in love with.

I refuse to eat rat and dog of cause also. Its a lack of knowledge when you do this. In my country we train rats to find landmines in Vietnam, and dogs can tell you if you are sick or not. So stupid to kill those animals for food, and be proud of it. They should not go on face book to much, but start learning in stead...
