EXCELLENT VIDEO Thank YOU for sharing this We used to have a Custom Made Smoker that we could do 26 Briskets on!!! Paid $5000. back in the 90s. I love the Square Fire Box... you would not believe how much we cooked on the TOP of the Fire box... Boiled Potatoes etc... YES... You're right.. about the Height of the Pipe... I'm 5'4"... that might be a problem. In the divorce... he got the Smoker (sad)... I sure miss... that smoker. I am going back into the BBQ Biz... but mainly want to do BEEF JERKY... NO I do not want to dehydrate anything... all I have ever known for over 50 years is REAL Smoke... Wood and Charcoal. I am sure the Electric Pellet Smokers are nice... but... like I said I love REAL Wood Burner. I would want at least 2 pull out shelves... and the Square FireBox to cook on top. And... a sheet of metal on the Bottom of the FireBox so in years to come it won't burn or rust out... plus... to be able to PULL out the Ashes... Come on now... why would anyone forget that??? HINT: PUT your ASHES on the LAWN and around TREES... it is good for the environment... Thank you for this great video I guess I'll keep looking...

I would have come out with it sooner, but havent had the time to do it. So thanks for your patience. Jeremy Yoder has a lot of the info on this smoker on his patreon page. You can watch all of it without having to pay for the membership, he has that info free. It's like an hours worth of content walking through the pit and showing how he runs the fire etc.

Thank you for emphasizing the extra importance of fire management on backyard offsets. I wish the manufacturers would do a better job of telling customers that you can't build a 1000-gallon fire in a 40-inch offset. And further dial-in instructions, such as the 50 percent stack damper setting in the case of this pit, would be helpful. You have proved that learning your cooker is the most important thing of all. And the Jello jiggle of your last brisket was proof of the pudding. Great video.

Have to research the market for these videos so people know the options out there! Blue smoke looks solid! Scoop baffle does look like a straight rip from the solution design but I doubt Frank or Jeremy have any patents on that design lol

@@AntsBBQCookout Ant, Blue smoke/big Phil have been around long before this Solution offset. When this dropped people in the blue smoke community where saying how the solution ripped off the the blue smoke design/baffle. So I believe you have that backwards. Also the blue smoke is a much much better deal and smoker, it’s larger at 24x48 and 3/8” thick steel. It’s the best value. And I’m not biased or own either one, but have cooked plenty on one. The solution looks as cheaply built as possible, everything from the hinges, to the damper to the angle iron legs. Just my opinion. Not to mention the size.

@AntsBBQCookout3 ай бұрын
Goldee 6 briskets is modest. But can do 7. Goldee is much more forgiving too on fire management. Cooks a lot like a big pit vs a backyard pit. Things I wish were different with Goldee though, it’s obnoxiously tall with no folding stack and the fire box is only 20 inches and super low to the ground.

The problem with grocery store brisket is it can be hard to find matching briskets to compare. I used to go to multiple stores looking for the right brisket. If you look at the long edge of the flat that's not covered in fa t, you can read the marbling of the flat, makes a big difference
@samacc25363 ай бұрын
Awesome video Ant! Would you say the final product (brisket) on the solution would differ from the Goldee’s pit or your 250? Also how frequently did you have to tend to the fire? In the market for something and it’s been a tough decision, thanks!
@AntsBBQCookout3 ай бұрын
No it will be the same, just cooks differently. I can go 300F+ when rendering fat in the 250 or the Goldee's but cooking at those temps in the solution seemed too hot to me. 275-285F for the end of the cook was money on the solution
