INGREDIENTS
two 1-inch/2.5-cm-thick slices sourdough
1 ripe, medium avocado, halved, pitted, peeled, and coarsely mashed
1 medium banana, sliced
1 teaspoon finely grated lime zest
2 tablespoons fresh lime juice
Crushed red pepper flakes
1 to 2 tablespoons (30 to 60ml) honey

What a beautiful episode. I really enjoyed the soothing atmosphere, the unique combination of the ingredients, the perfect seasoning; instead of salt and pepper; flakes and lemon zest and above all the inspirational background of Apollonia.

One recipe that I am curious to try. I was introduced to eating avocado as a sweet several years ago by a friend from Brazil. I've since tried to taste various ways of using avocado beyond savory and have not been disappointed. Thank you @food52 for consistently showing me the genius ideas.

A favorite of many is peanut butter with banana and honey drizzle and here the avocado takes the place of the peanut butter. Very interesting!

Was really delicious. I loved it- even without Poilane's amazing bread. Toasting the bread back to back so one side is soft is genius. Makes more textural intrest and contrast as well as it doesn't tear up the roof of your mouth. I'll be toasting many slices of bread intedned for a sammy's with this with technique now. As a professional chef, I'm heavy handed with salt...but, I agree; it's better without salt. Just a kiss of salt disrupted the floral harmony of the fruit. Tasty with Aleppo pepper or Sumac too.

She said "why limit yourself to salt and pepper"...meaning she uses other spices not on this particular recipe. and usually a young girl that happens to lose both her parents to a helicopter crash and has to take over a family business is "woke". A 3rd generation artesian baker and elite patisserie owner in France is also usually not considered a "fake" either.

Yeah, I’m sorry. This was absolutely disgusting. Missed so many elements. This was two steps away from baby food. Attempts of being “woke” from Paris in full effect. And, Italian bread is much more elegant and complex.
