Happy Anniversary Brenda and David. This pie looks delicious and I will try this one. I love coconut pie. One tip that may help you with your beautiful Kitchenaid, is to take a paper plate and punch a hole in the center, big enough to put the beater through. Place on top of chosen beater top side facing downward and attach beater. Now you can mix with very little splashing if at all. God bless you and get well soon. xoxox

David, You need to build Brenda an Island. She has the exact same problem as me. No counter space. Build it almost the width and length of her table. But make it as high as her counter. On each end, make extensions that will fold down with hinges. Underneath the counter, make shelves with cabinet doors with extra storage. On the bottom, put casters, where she can roll it anywhere. And get rid of the kitchen table. I have RA, and having to bend down at kitchen table height KILLS ME...I am having such a hard time with my RA right now. PLus insurance wont OK my meds...because the infusion I take, they are using for covid patients. Please pray for me, as I pray for yall...Take care.

I have neuropathy too. I have fallen countless times and each time an ambulance was called. One time I had to go to a rehab and had to learn how to walk again. I now use a cane and I can’t lift my legs too high. So I hope you get better soon. It’s tough pain..

Love this channel. You two are the best. I wanted to say that I have made several different impossible pies and the only difference is that we used the blender to mix it and it is so easy just dump it all in at one time and blend. Them dump in pan and bake and you get a pie,with a crust and no work. ♥️👍

Bless you Brenda, sometimes crap happens. Glad you didn't get hurt any worse. I have neuropathy also and fell twice in one week. I still had big scrapes and bruises when I fell the second time. I'm 72 and was wearing flip-flops. My knee was numb feeling for a few weeks. I started making that pie in early 1970's so good.

I have had to do something else going on, and David has been taking care of the kitchen. now the sink is all white. he gets that stuff full strength and he uses it that away. you can clean the grease off an old engine. lol he got the finger sermon last night

well I am doing ok. I have to ware a cast for 2 more weeks. I have a black one on now. then I have to wear a boot for a while and do a lot of pt. I will go there and do it a couple of times then I will do it at home. The doctor said it will involve about 6 months. it will be ok. i will do pt at home because I dont want to loose the use of my hand. the doc, says that I will if I dont do the pt. I did most of it at home when I had to do both knee replacements. It hurts, but I know that it has to be done

Oh Brenda, I understand the numb feet I have that too. You are right, it seems like I don't pick my feet up right too. I have to take gabapentin 4 times a day just to help it. They will let the arm heal about a week then pin it. Brenda take care of yourself. We have made this pie since the 50's.

I understand completely that you can't remember how it happened. Just before Christmas I fell and fractured my ankle. Now 3 months later, I am still using the orthopedic boot, but I do know how long it can take to heel, so one day at a time...of course SS has their own opinion. A couple of years ago, I made a pie that was made the same way, except it used flour...probably SR flour and you added grated orange peel, and or orange flavoring, and it was awesome! I lost the recipe, but this one sounds a lot like the one I had. It was called "Coconut Pie with the Whirl of a Blender." Maybe it has something to do with the issues you were having by using a blender. Happy Aniversary, either early or belatedly.
