Grew up in an Irish-American family. Ate lots of potatoes. My mom often made a ground pork and potato dish, cheap and cheerful. One of my favorite recipes is her clam chowder. Just onions, potatoes, canned whole baby clams and canned milk. When I asked for amounts, she said an onion, can of milk, two (small) cans of clams and potatoes. Asked how many potatoes? She said "it depends on how many people you have to feed.

Tipper, put you some bacon drippings in your stewed potatoes. Be sure you don’t use too much water and enough bacon drippings and salt and pepper. Cook them fast and stir for the first few minutes of boiling. Then, turn down the heat and cover them. Stir them a couple of more times. This is how my momma made them and she even cooked them like this to make mashed potatoes. She drained off the water when they were done and saved it to add back with butter and milk or cream to the potatoes. She made the very best potatoes ever! THANK YOU SO MUCH! These Cheesy Potatoes are going to be delicious. ❤ Absolutely nothing is better in the summertime than a good ole BLT! YUMMY!

I grew up a meat and potatoes girl. Pap and his siblings grew up very poor, with his dad dying very young of appendicitis. My Nana came up with a twist on pasta fagioli, using beans, potatoes, pasta and bacon and ate it with buttered white bread. Talk about stick to your ribs!!! ❤

My grandmother used to make what we called "potatoes in the pan" which were thin sliced potatoes put into a baking dish with butter and whole milk and baked. Cheese was not a part of her cooking, so purists in the family go with the basics. Others (including myself) add crumbled bacon or diced ham, onions and/or garlic, and cheese of various sorts. This is the kind of recipe that adapts to most sturdy additions to build a complete meal.

I make my cheesy taters kinda like yours but, I don’t add any kind of milk. I slice my taters in circles like you would a tomato and boil them while I fry some bacon and onions. Then I layer them adding sharp cheddar cheese between the layers, bake it on 3:50 for 10 to 15 minutes. So good! Your lettuce is so fresh and pretty. So sweet of Matt to call ya a peach. Y’all have a wonderful weekend. Hugs from the southeast coast of Florida 😎🦩🌞🦩😎

I love all of these cooking videos! My cookbook arrives today, cant wait! My grandmother would make something she called Cheese Dreams, it was a toasted piece of white sandwich bread with sliced tomato, thin slice of onion, bacon, and a slice of cheese on top that was put on a cookie sheet and put in the oven until the cheese melted. It was like an open faced tomato, onion, bacon, cheese sandwich. She would serve it with a tomato and cucumber salad or her homemade potato salad. Such fond memories of growing up with my grandparents.

I love a good BLT...my momma said they would take their lunches and it was biscuits usually with collard greens in it. They thought the children who took light bread sandwiches were from rich families. Papa worked town and finally started stopping and buying light bread for their lunches so they thought they had become rich...it took them a while to realize they weren't any richer than before.

Larry & I are praying for Mrs Cindy & for you and your family. A catastrophic affects the entire family. I have just spent a couple of weeks with my mom at the hospital in Chapel Hill & I have just got her settled in at a rehab facility last week. She experienced a rare disorder, where her blood was clotting in her veins & she was bleeding into her tissue of her legs simultaneously. They aren’t sure what triggered it but it will be a long slow process of healing her legs. She has battled mouth cancer for 8 years, & has not eaten solid food for for approx 4 years. She is almost 90 & still lived alone & was very independent. This has about broken her spirit. I go and sit with her daily. The doctors said it could have been triggered by the cancer or one of her cancer drugs.

I certainly love radishes with salt and green onions as well...just had both last evening at supper...we had left over ham so I made toasted Westerns...I'm going to try the cheesey taters as well!!!😊 I was going to make corn bread today but woke up with sore throat and chest congestion, so will wait till I'm feeling better.. I know folks who make French fry sandwiches...Butter, salt, mayo, fries on white bread...It is German...God Bless🙏

I tried to grow the Cherokee purple tomatoes one year, they didn’t grow well for me in Washington state. Last year the best tomatoes were my cherry tomatoes. So this year I am trying 4 different types of cherry tomatoes. I am looking forward to my summer salads.

Looks great! My country granny never made casseroles cuz Papa didn't like them. She never really cooked with cheese, either now that I think on it. Fried or mashed potatoes only in her house. Weird grandma had one potato dish and she only made it at holidays. Super easy but very tasty. If you buy velveeta just for mac and cheese or to make that sausage dip, this is a great way to use it up. Boil peeled potatoes sliced thick, drain, put back in pot to dry a touch, then dump the slices into a 9x9 oven proof pan. In the hot pot, add one can cream of mushroom soup, a can's worth of milk, and about a pound of diced Velveeta. Melt well and pour over potatoes. Bake about 20 minutes. Remember to season how you like. It sounds complicated but really isn't. She made this small pan of potatoes to feed my grandparents, her 4 kids and their spouses, and then 11 grandkids. She also served it with a canned ham from Aldi. This is why my family always ate at country granny's before heading to weird grandma's! Btw, I only call them that online to differentiate, also it is true.

Hey, I received your cookbook a few days ago. Love it! I wondered it you every heard of Persimmon Pudding? It’s a favorite in southern Indiana. The amazing thing is…it isn’t pudding at all. It looks like a brownie, but has the texture of pumpkin pie. It is delicious! Many Hoosiers in rural Indiana have persimmon trees. They harvest the persimmons in the fall…if the deer haven’t eaten them first and make the pulp and freeze as much as they can for persimmon pudding all year long.

Your supper looks really good! You make your BLT'S the same way we do. I loved hearing that you eat tomato sandwiches like we do up north. They are so good. Love your videos and am so glad I found your channel.
