I have seen so many Aapam recpies..no one has ever explained it se well .The so called Kerala recpies are also not so well explained.. technically. You are the best Varun .You are so sincere. God bless you!

He explains the exact science behind the appam , which is very eye opening and important to some o us , to understand why we do whatever we need to do. Our grandmas, mothers and fathers used to tell us "you need do it this way, not that way" but never the reason behind the action, so we understand further. But Varun Inamdar's explanation goes up and beyond, from the recipe to the tools we need to use. This is so important! and many chefs don't do this enuf.

I only watch Rahshri Food , only if its Varun Inamdar's recipe and instructions. He is one of the most under rated chefs and should be given more credit.

I made these 'appam' today. They turned out well and were tasty. 😊 It is great to be able to do this with homemade instant batter instead of using shop-bought packeted ones. Thank you very much for the recipe! 👍

Only just discovered you Varun. Love your authenticity and style. Esp the bit about the role of 'kappi' in the overnight method.... where I have memories of raw rice being soaked for hours and then ground before the toddy was added.

Hi Varun Definitely will try your method. Never knew can make hoppers without overnight fermentation. I have this palappam podi and mentions your way. It has raw rice flour and yeast already. Will follow your way and let you know. Thank you.

I made this appam and it was good. Thank you. I have a doubt you said to add sugar once with the yeast and then with the flour so how much sugar are you using. The appam is too sweet.

Had eaten this in dombivli , after my marriage, n was quite surprised...bcuz mumbai me i hvnt even heard or tasted it 20 yrs back then....they are delicious and every where in dombivli u vl find it...thana me nhi milega or western line wer i lived had never heard.... thanks for sharing
