This patte recipe was well done. Salute! Everyone saying that its time consuming, too many steps blah blah blah, are either lazy, or are just don't understand that Haitian cuisine is all about detail.

Just to be sure I understand well... the process of folding 6 times is: first, fold the rectangle shape. Once it's done, you roll then you do the fold 3/4. And then you fold it in two pieces. refrigerate min and repeat 6x.

+Chris Louis-Jean +Chris Louis-Jean I attempt speaking once and it did not go well, I'll eventually learn how to. The clip of how to fold begins at 4:33 and ends at 6:06. At that point the butter is sealed inside of the dough (that's why I burst an air bubble). Once you're done folding the dough at 6:06 refrigerate it for 30 minutes to set the gluten. Relax gluten is what allows you to roll the dough without it shrinking. The folding and refrigerating process should be done a total of 6 times. This is what create the layers. Actually it's the layers of butter and dough that creates the layers. Make sure when prepping the flour it is shifted at least once. 3 times is best!!! Sifting flour allows the final product to be light and not heavy. I hope this helps.

it looks as if you just folded the flour on top of the filling once. How does it come out the oven as if it's layered? Please explain how to cover the filling so the end result is layered.

Latoya Etienne hi, I fold the dough six different times. There is 30 minutes of refrigeration rest period after each fold. It's the separation of butter and dough that creates the layers. You know since oils (butter) and water (dough, which contains a lot of water) don't mix.

Awesome! But could you update your list to include lime? I forgot it at the grocery store today until I reviewed the video 😓 For the filling in the video you say 1/2 cups of water but in the description 1 cup. Also, bake for 25 minutes but under what heat? (400, 425 etc. ?)

If anyone is having a hard time with the pastry you can buy Trader Joe’s Puff Pastry (Pâte Feuilletée)-if it really is a product of France it would be nearly the same or similar enough. The filling is one thing you cannot get around though, that would truly determine on how Haitian your patty is. So if you did the pastry the Haitian way and put in some regular filling recipe you will not have a Haitian patty. The flavor and spices inside is literally the heart of it all. Now of course I prefer a 100% Haitian patty. So if you have the time, I would stick it out to the end with the original recipe. Cheers!

Justmiss jamey it looks like she used vegan crumbles. So technically, this version is vegetarian (I missed the beginning but I think butter is the only other thing in there). So seasoning smartground or some other texturized protein can do the same thing
