There are some ingredients that we don't usually pay much attention to in the kitchen. One example is the sweet potato. This tuber is very rich in carbohydrates. It also provides potassium, vitamin A, b-carotene and vitamin C. As well as being eaten roasted or fried, it works very well in sweet preparations. When we cook the sweet potato at low temperature for a long time, you will see that it gains even more sweetness.
In Sergio Cocina we are going to make the most of sweet potato by combining it with apple and preparing an easy, quick and flavourful tatin-style tart. With three simple steps, you will see that the tart is ready to serve: caramel, fruit and oven.
The flavour is very smooth and the touch of cinnamon goes very well with it. A different kind of apple pie, with sweet potato, which gives it that sweet touch that is sure to surprise you.

1 puff pastry dough
10 g butter
2 apples
1 sweet potato
100 g sugar
Lemon or lime drops
