Dough
4 1/2 to 5 1/2 cups of flour
1 1/2 tsp salt
2 pkgs quick rise yeast ( 5 tsp)
1 cup warm milk
1/2 cup warm water
1/4 cup melted butter
1/4 cup warm honey
2 eggs
1 cup raisins
Mix wet ingredients first and set aside.
Mix dry ingredients and raisins in a large bowl, pour in wet mix and blend until dough pulls away from the sides of the bowl.
Turn dough onto floured countertop and knead until smooth adding flour if too sticky.
Place dough ball in bowl, cover let rest in warm place for 30 minutes.
Filling
1 1/2 cup white sugar
2 tsp cinnamon
2 cups chopped apple
1/4 cup melted butter
1 cup chopped nuts
Mix the filling ingredients together and set aside
Cut dough ball into two and roll out each section until they measure about 12" by 18".
Spread additional melted butter over each section (about 1/8 cup on each)
Spread filling over top of sections and spread out evenly.
I sprinkle more cinnamon on top and I add some brown sugar, this is optional.
Roll up each section and cut in 1" to 1.5" slices. Take one slice and give it a twist. Place the twist in a greased baking dish. You will likely need at least two large baking dishes.
Bake at 350F for 30 minutes or until golden brown.
Glaze
1 cup powdered sugar with enough water to make is drizzling consistency (start with a tsp and add tiny amounts, stir until just right).
***Once the twists are out of the oven, immediately drizzle them with the glaze. After that remove the twists from the baking pans and put them in another greased baking dish or serving platter.
IF YOU WAIT TO REMOVE THEM AFTER THEY ARE COLD THEY WILL BE HOPELESSLY STUCK TO THE BOTTOM OF THE PAN. Trust me on this, I've learned the hard way.
You can drizzle the yummy caramel stuff from the bottom of the pan over the buns or eat it with a spoon while still warm !
I have been making these for years and they are really really good.
They are at their best still warm from the oven and they do get stale quickly.
If they are a bit stale a day or two later you can warm them a bit in the microwave before eating.
This makes about 24 large twists. I usually freeze half the recipe (you can do this before or after baking)
You can change any part of the filling recipe you want to your taste!

What's nice about these is that the roll part is pretty thin an there is a lot of filling, so even if the dough doesn't rise much, they are still good.

I have always wanted to make cinnamon buns but was always afraid to try. I have had more bread items come out less than stellar. You make it seem "not so intimidating" and and have inspired me to give it a try. Thanks!

looks delicious. I warm my microwave for 1 minute. this makes it a warm enough environment for dough to rise. I cover my dough with a towel & place in microwave for 1 hour. works like a charm. I also make my own brown sugar by adding a little molasses to my white sugar & mix.

These are regular cinnamon buns if you leave out the fruit and nuts and don't twist them before putting them into the pan. I also have another cinnamon bun recipe called "sticky pecan rolls"

Ohhh Myyy I have seen you make some tasty looking treats, but this one absolutely takes the cake (so to speak) This is the REAL DEAL....truly homemade pastry!!!! Not many people doing this these days. You are the QUEEN DIVA!! I love cinnamon too....and anything that starts with the yeast is real in my book! Holy smokes these look SOOOO good. I would make the trip to Canada just for them! I never seem to have good luck with cinnamon rolls but I think I may have to give these a try they look so YUMMY!

You have it exactly right. Put them in the pan, cover them and put them in the fridge. Next day take them out, let them warm on the counter for an hour or so an then bake as per recipe!

yum, i made some similar just using scone dough years agon but i dont think i twisted just the wheels. looks yum. i am on a no carb diet but i can just imagine the taste is lovely how do u stay so slim! your hubby and max must love all your baking.

@caramelcup08 No, you don't have to twist. Just roll and cut in slices and place in the pan. The twisting is just something different to try

@christmasgirl8 These are easy, but time consuming (rising time). You really can taste the effort you put into these though, they are really good. You could buy already made store bought bread dough. This would cut out a step, just sprinkle the raisins (if you want them) on with the brown sugar and butter. Won't quite be the same though as this dough is an egg dough and store bought won't.

@feliciajuly I ran some tap water to the temperature I usually use and measured the temperature in it and it was 105 F (40C). Basically as warm as hot bath water (not so hot as if you put a finger in it would be uncomfortable). Don't stress out about getting the temp. just right though, you could use cold water and milk but it would just take longer for the dough to rise. That's all the warmth does, speed up the yeast action. :)

My bread doesn't come out that great either, but these are so full of good filling that it doesn't matter if the dough is less than perfect.

@nkr1695 I think that they mean whatever liquid you are using in the recipe, in this case more milk. Warming the liquids makes the yeast rise faster, they can go in cold, but it will just take longer for the rising process to happen. Sometimes when I'm in hurry-up mode for dinner and I want to make pizza, I heat my flour in the microwave for a few seconds to speed up the yeast and it rises faster.

Roll them out, put in the filling make the twists and put them in the pan. Cover and refrigerate overnight. Next morning take them out, let them warm up a bit and rise and then bake. :)

@nkr1695 Googled "honey substitute" and found this: 1 cup honey = 3/4 cup (180 ml) maple syrup plus 1/2 cup (100 grams) granulated white sugar or 3/4 cup (180 ml) light or dark corn syrup plus 1/2 cup (100 grams) granulated white sugar or 3/4 cup (180 ml) light molasses plus 1/2 cup (100 grams) granulated white sugar or 1 1/4 cups (250 grams - 265 grams) granulated white or brown sugar plus 1/4 cup (60 ml) additional liquid in recipe plus 1/2 teaspoon cream of tartar

They would have to be on something non-stick. I find that the sugar melts and then sticks like crazy to the pan making it difficult to the the buns out of the pan.

These look amazing! I'd have to remove the chopped nuts (the only nuts I can eat are peanuts, all else make my throat scratchy and I have a bad reaction). I'll have to give these a try!

@rjitz Thanks for letting me know, you tried and like these! I love hearing from people that try my recipes out :) Did you find that they get stale quickly? Heating them up in the microwave for a few seconds makes them better on the second and third day (if they las that long, lol)

I've always used the dry quick rise yeast and have never had an issue with it. I've heard you can buy other kinds (yeast cakes) but I've never tried them.

@maricari5000 I've never figured out what kind of apple is best for what kind of dessert. I used Macintosh in mine because those are my favourite apples for eating them raw and I had them in the house.

oh my goodness! i was wondering if you know of any wayto do part of this process the night before? like maybe up to letting them rise, then putting htem in the fridge and poppping them in the oven the next morning? would that work?

@fatmanswimming For either recipe you can leave out the nuts and the apples in this one and they will be just regular cinnamon buns
