Apple coffee cake: A simple pleasure! (Vegan Friendly)
Ingredients
Apples: 4
milk: 1 cup (150 ml)
neutral oil: 1/4 cup (50ml)
sugar: 3/4 cup (140 grams)
Flour: 2 cups (230 grams)
Baking powder: 1 tbsp (14 grams)
Cinnamon: 1 tbsp (8grams)
Directions
Peel, core and dice 1 apple.
Peel and grate the remaining 3 apples.
Sift together the flour, baking powder and cinnamon then whisk in a pinch of salt and the sugar.
Then add grated apples.
Add milk.
Add neutral oil.
Add the diced apples.
Mix everything well, then pour into a greased pan of choice.
Top with raw sugar
Bake at 350 for about 60 mins or until toothpick tested.
Let cool ten mins in pan before removing to cool fully on wire rack.
Do not let this cool fully in the pan as it may stick due to the sugar that can crystallize and stick to the pan. No matter how well greased, this can be a possibility. To avoid such, only ten mins cool in pan then remove for a full cool.
Serve warm with ice cream or have chilled with some coffee! Either way this is absolutely delicious! And a great way to also use some apples that have vegan to brown…
