Simple. It makes swapping to a used chassis from a donor impossible. The button has a chip with a serial number on it and the firmware will not accept this swap.

Most aftermarket screens do not come with the proximity sensor pre-installed, so you will need to carefully remove the sensor off the damaged screen and install it on the replacement. Not an issue if you are using OEM parts ordered directly from Apple as those come with that component pre-installed. If you can successfully disassemble the rest of the phone as well as the video guy does, this should not be a difficult task. But it does have a fair bit of adhesive holding it to the screen, so use heat, rubbing alcohol and care.

A bit more time consuming, but if you want to start learning how to repair phones, if you grab an iPhone 6 or 7 and tear it down to its basic components and successfully reassemble it, you have lots of the basic skills needed to work on the higher end stuff, just have to work around the stronger adhesives. If you can't get the screen off an iPhone 12 without breaking it, don't try your hand on the 16 unless that screen is already damaged. Never operate on a patient you can't afford to lose if you don't know what you're doing :)

Good video, but I found his pronunciation of the word "tear" a little annoying. He pronounces tear like the liquid the appear when you cry or like beer, the liquid you drink at a bar. He should pronounce it like fare, the price you pay. AFAIK, that's the correct pronunciation, and has been for all of my 50+ years of life.
