This Apple Loaf Cake is a delicious fall dessert. Made with creamy batter with apples and crisp sugared top. A scoop of ice cream is especially good with this cake.
INGREDIENTS
1/2 cup (100ml) heavy cream (or milk)
1 cup (120g) all-purpose flour
3 eggs
3/4 cup (75-80g) icing sugar
1 teaspoon pure vanilla extract
6 cups (700g) peeled and sliced apples
fine zest of 1 orange
Topping:
2 teaspoons sugar
1 teaspoon ground cinnamon
coconut flakes or almond petals, optional
PREPARATION
1. Preheat the oven to 400°F/200°С. Line a 9x5-in loaf pan with parchment paper.
2. In a large bowl, whisk eggs, vanilla and sugar until creamy. Add heavy cream, flour in three steps and fine zest of 1 orange. Fold in apples and mix well.
3. Pour the batter in the prepared loaf pan.
4. For topping, combine the sugar and cinnamon. Sprinkle over batter. Sprinkle coconut flakes or almond petals on top.
5. Bake at 400°F/200°С for 40 minutes. Turn off the oven, cover the loaf cake with foil and leave for another 10-20 minutes inside.
