Ingredients
Preparation of apples:
6 medium apples, peeled and sliced
30ml of lemon juice

Powdered cinnamon to taste

2 cups of all purpose flour (260g), type I (10% protein).
3/4 cup sugar (135g)
40g vanilla sugar (1 packet) or 1 tablespoon of vanilla extract or essence
100g of cold unsalted butter
1 pinch of salt
1 teaspoon of baking powder
70ml of orange juice
Crumble coverage:
3 tablespoons demerara sugar (45g)
Powdered cinnamon to taste
Caramel peel:
2 tablespoons butter
3/4 cup demerara sugar
Peel the 6 finely chopped apples
20ml of lemon juice
1 tablespoon of vanilla extract
1 can of single cream 17% fat (200g)
1/2 tea spoon of salt (I used fleur de sel), 2.5g
240ml cup size
