I used this recipe to make apple pie filling with a half bushel of seconds from our local orchard. The apples were HUGE and beautiful with only a few bruises. I think I used EVERY big pot that I own for the different stages of the recipe!😁 And then they all seeped out in the canning process but sealed! In spite of the mess,I got 14 quarts of GORGEOUS delicious apple pie filling!! My husband loves my apple dump cakes. I dump a quart of pie filling in the bottom of a 9×13 pan,sprinkle dry spice cake mix on top,cut a stick of butter into cubes and evenly sprinkle on top,then bake at 350 for 45 minutes! So good with ice cream while warm!!!😊😊🍎🍎🍎🧡

I did this recipe. I have that book. I didn’t blanch the apples though 😐 I was afraid they would get mushy. They turned out good. I have to make more soon also. Thinking of pints though and cutting the apples smaller like for fried pies. Have a wonderful day!!!!

I hate peeling fruit, and leave the peels on whenever possible. I suppose there's a good reason to not can unpeeled apples? I always leave the peels on when making applesauce, because they dissolve into the sauce. Loved your canning music!
@Jeni_Gough3 жыл бұрын
Thank you so much! The peel hold bacteria making them not good for canning. They may mold or could cause a food born illness. 😊

Jeni, my filing oozed out. I’m so frustrated. I used the Ball book and followed the instructions but it oozed out. They sealed, but are they really sealed? I have 14 pints. 🙈😭
@Jeni_Gough3 жыл бұрын
I give 1 1/2 inch headspace with pie filling because clear jel expands and it oozes out. If they sealed, leave them on your counter for a week and check them daily. After a week, they are safe to put away if they are sealed. I agree, it’s frustrating. If you want, you can re process them by putting the filling back into a pan, put clean jars in to sterilize, heat the filling, fill the jars leaving the extra headspace. Hope this helps. 😊

I tried this recipe yesterday and left the 1 1/2" headspace. Two did not seal and the others are full to the top. I had quite a bit of syphoning. My questions are how do I know if they are sealed or just stuck on and are they safe if they are full to the lid? This was my first try at pie filling
@Jeni_Gough3 жыл бұрын
They are full to the top because the filling has expanded, if they are sealed, they are fine. When you open them, the filling drops down. Not sure why you had so much siphoning with 1 1/2 inch headspace.

Ive seen videos on this and they pressure can them,I didnt know you can waterbath them.
@Jeni_Gough4 жыл бұрын
It should be water bath canned, pressure canning will over cook the apples and have apple sauce. plus, they are a high acid food. You wouldn’t pressure can apple jam. I haven’t seen pressure canning of apple pie filling, but that is not the preferred method according to USDA or Ball.

I canned this recipe this year. It turned out so beautiful. I'm with you on more spice. For us it is extra cinnamon. I cant wait for Thanksgiving to try it out. I did allow 11/2 inch head space and my jars came out perfect. I enjoyed your video, they are gorgeous. God bless

Hi there!! 😀 I like Fuji or gala for pies, I really don’t care for Granny Smith unless they are mixed with the others. Mixing them for pie filling is usually what I do. I hope you give it a try, you will love it!! 😁
