I know what you mean about a generous head space. I've always filled my apple pie filling to just below the 1" mark and I'm at 6000 ft elevation and I still get bubbling out of my jars. I usually have to reprocess one or 2 jars every batch I make. There's just something about that pie filling and it expands so much!! But they're front and center in my pantry. Absolutely gorgeous!! Thanks Linda. Yours look amazing and I know they taste amazing too. The Amish canning cookbook never fails when it comes to pie filling!! ❤️❤️

Last year, I made applesauce from Honeycrisp. I got them for $20 for a bushel! Best applesauce ever - nothing added. I will definately be making this pie filling - my first time!

I canned 7 quarts up this year. It is beautiful. I got it off of your video where you used pumpkin pie spice. I had to leave 2 inches of head space and it worked out great.

The first apple pie I made that won over my adult step-children was made from honey crisp apples. One daughter told me that she NEVER like apple pie until she ate mine and now she looks forward to me making them. Awesome! Thanks for the recipe!

Love this recipe! I can it in pints and use it for apple fritter bread all winter. My first time making it, I had a lid explode off from the swelling. Now I fill about a half inch above where the jar curves to the head.

I use my peels and cores to make apple jelly. I put them in a pot, cover with water and cook them down. Drain, measure juice, sugar and it makes yummy jelly. Of course I don't have chicken and I hate to just throw them away. Thanks for the video.

I always do 1 1/2 in headspace. It rose to the top like yours and no oozing . My jars are as pretty as yours are! Great video Linda!

Love this recipe. I had the same problem with it coming out of the top and I think I did a little more than a one inch head space. Next time I’m going for a 1 1/2” head space. They sealed though and they turned out wonderful. Thank you for this video I love watching you do these recipes it gets me motivated. ❤️

It makes good apple crisp as well. Glad to see you doing the apple pie filling. I did the apple pie filling, apple butter, and apple slices over labor day weekend. I'm with Charley Marcus who says the clear gel expands in the jar. I now give mine 2 inches of head space and I still have evac issues. I had to reprocess two jars.

LINDA! I made this recipe and holey moley! SHUT THE FRONT DOOR!!! It is the most beautiful out filling and mine looks just like yours does so I know I made it right. I had a small amount left over that had a few apples in it and the very delicious sauce. That's gonna be great on waffles or pancakes! And I also used Honeycrisp because they are my absolute FAVORITE!

Thank you for this video...I haven't made apple pie filling in a few years and it would be nice to have some on the shelf again. Just saw Honeycrisp advertised locally for $1.29 so now I will take advantage of that knowing it is a decent price. Now I'm off to watch your follow-up video. Thank you, Linda!

Pampered Chef has a wonderful apple slicer that works great. Ove had money for years. My kids love it! Hope this helps

I remember a few years ago when someone made pie filling they had the same problem with head space. So you have to make the head 1 and 1/2 inches but they should seal

ClearJel expands a lot for me. I always leave a healthy 1-1/2" headspace when I use it. I don't know about the altitude causing it but it might. I'm at 157 ft above sea level.

Do you use a recipe for apples? I have one of the pear trees that has really hard pears probably kiefer. I wondered if they would work like apples while they’re hard. (They will soften about 2 weeks after picked.)

@@phoebejernigan9473 yes they should work. My pears were hard also, not that great for just eating raw. A basic apple pie filling should work good. I just added sugar & cinnamon to taste. Some of the pear filling I I canned & some I put into a pie crust & froze whole. Then baked when I wanted a pie. It worked great.

clear jel expands....only pack jars to the start of the curve of the jar neck. Approx 1.5"

If you blanch your apple slices prior to adding to the sauce mix, you will have less siphoning due to the apples expanding because of the amount of air in apples. Many skip this thinking it an unnecessary extra step but blanching fruit help preserve the headspace and help cut down on fruit float, too.

I love my apple peeler, slicer, corer. It’s so quick and easy. You do have to have nice crisp apples or it doesn’t work well.

I just made this pie filling today using the NCHFP recipe - the same recipe as yours except it said to blanch the apples 6 cups at a time for one minute - I canned in pints and all of my jars sealed without issues.

I didn’t blanch my apples. I just read that blanching helps reduce the air in the fruit. I have mine in the canner right now. Hopefully they turn out just fine. ❤️

You should get the kitchen aid peel core slicer attachment you can use the attachment to peel your apples

Linda it looks beautiful! I have a question though, if your apples are cut in chunks like that how long and what temp do you bake your pie? Will the crust burn up before the apples are soft? How many inches is your pie?

I used 1 3/4- 2 cups of the clear gel. Don't over fill, just fill to before the jars narrow. The jel swells. It works great. If its over filled it leaks.

I'm Beyond confused! What's a acidic bath? How do I make that? I've went back Several times trying to get recipe. Here's what I think 12 lbs of apples 5 1/2 c sugar 1 1/2 c clear jell 1 Tblsp cinnamon 1 tsp nutmeg 7 1/2 c apple juice 3/4 c lemon juice I'm doing this tomorrow. Thankfully I don't have enough apple juice! I bought a Huge bag of horse apples for $18! What a bargain!! Yes they each have a spot but I'm peeling anyways. They are delicious. I hope you see my comment so you can put me in the right direction lol I've never had issues with vegetables I've canned every summer but this is my first time with fruit. Nervously excited 😆

You said if you have a better way to peel the apples, get a Johnny Apple Peeler. You can peel the apples then use one of those gizmos to core and slice. Takes like 1 mins per apple

It looked like the jars were filled up less than an inch. Stop filling when the filling comes to where the jar starts to curve in. I was given a super neat peeler from my sister-in-law last Christmas. It's from GEFU. It allows a person to go back and forth to peal your apple, carrot or potatoes etc. I love the handle and how easily it seems to peel. Check it out. I loved your idea of adding cardamom. I have a box of gravenstein apples waiting for canning apples into this recipe. I need the clear gel. I cant find it around my area so I'll need to get it on line. Thanks for your help!

Followed the AmishCanning recipe for the Apple pie filling. I left11/2" headspace and a few jars still siphoned. The lids sealed, but pie filling had oozed down the side of 2 of my quart jars. This was the first time canning pie filling so question is..are those 2 siphoned jars safe to put in my pantry for future use? Thanks for any replies.

In the beginning you said 5 cups of apple juice then when your pouring it in you said 7 1/2 cups. Which is it?

Try stabbing end with fork, to hold Apple while peeling protect your hands those blades are sharp!

I have always cut my apples smaller fir my freshly made pies. Old habits I guess. So would the canned recipe not work if I cut them smaller ?

Hi Linda. I'm a gadget freak and have one of those apple peeler/corer things so it make it really easy to peel and core the apples. I used to have five apple trees where I lived a few years ago but I moved to the mountains in Idaho and no apples here. I know where I can buy them though.
