That's a really good idea to hold back a cup of your must to add later. I've heard of people carbonating their brews that way, but I have not tried it yet.

I'm in the process of making something similar to this. I made a wine with apple butter and have been toying with the idea of making a cyser with apple butter. I am using a 1 gallon of apple juice from concentrate 28 oz. jar of apple butter (W/O corn syrup) 4lbs honey, Red Star premier Grand Blanc Yeast. Raisins yeast nutrient 1 1/2 teaspoon of Pectic Enzyme Powder because the wine I made using apple butter never cleared up even with cold crashing for a week.

Hi, just found your channel. I have been making mead on a shoestring about 6 years, being on SS it is a must. How did this taste or have you tasted it yet. I love making mead and have 6 different ones going right now. I also am a traditional as far as I will use some yeast hulls but prefer to use no other additives.

Thanks for your videos. My wife and I were drinking some homemade wine at a fair and decided we should try it and she found your videos and I have been binging them. I have made 3 so far but I am only like a week in so my results are far away. One question I had that I am not sure I have seen you address, but what kind of water do you use? Are you purchasing water for each batch?

You said to let it ferment for 3 to 5 days. I’ve had mine ferment for three weeks. Depending on how much sugar I started with. If I after 3 to 5 days I transferred to a secondary vessel? Should I still put the air vents on and let it continue to ferment? I made mead three years ago. Did not like it after the first 10 months. But at three years to the day. It was amazing

In the video I stated that a vigorous stir during the first 3 days, then racking after 5 - 7 days. Airlocks should be used during the first several months, if not thru the entire bulk aging process.
