Stacey if you don't have or don't want to use a pastry brush while making caramel, put a lid on your pot, and the steam created will prevent crystallisation of the sugar.

I use Glucose syrup for my caramel, really was a game changer when I started using it. It stops it crystallizing and just makes the whole thing so much easier. I use it in my coffee, or boil it down a bit more and make hard chewy caramels like the old Roses chocolates before they changed.

Hello 👋 Tracy from Canada I meant to tell you I am a Bacher and cook too and I rold 14 big meat pie I am a French Acadian Canadian we make are pie with pork beef and chicken.i made 15 turkey pot pie and 15 sea food pie two batch of milk bread and six recepies of cookies on my one square foot counter top I have a very small kitchen so all this to say you don't need a big fancy kitchen to enjoy cooking and I can not wait to try all the trick you give us the doctor said two month before I can stand in my kitchen 😊 so I will watch your vlog in the mean time have a nice happy life.

How funny. To use up some apples after making fritters, a few weeks ago, I made some thin flour tortillas rolled up with apple filling and nuked them to heated and a flan sauce. Yours fried looks more fun.

Well I took the bull by the horns and at 1am on an extremely hot summer night in Napier I made a half batch of your Caramel sauce for my son to have on his Christmas breakfast (I'm have a berry one). I think it turned out well even though there are few small lumps. Gosh you do have to move fast I think that was the hardest part for me, lol. Thanks Stacey.
