🍎 Tarte Tatin
🥄Dough:
150 g flour (1/3 lb.)
130 g frozen butter (4.6 oz)
40 g sugar (1.4 ounce)
40 g yolks (1.4 ounce)
2 g baking powder (1/2 tsp.)
1 g salt (pinch)
🥄 Make the dough.
1.Stir flour, baking powder, and salt.
2. Grate the butter on a fine grater, dipping it in flour. Stir until crumbled.
3. Stir the yolk with sugar, combine with the dry part. Knead the dough.
4. Roll out the dough into a 22 cm circle, place it between two sheets of parchment and refrigerate for 30-40 minutes.
🍎 Filling:
4-5 apples
150 g sugar (1/3 lb.)
1/2 vanilla pod
🍎 Prepare the filling.
1) Melt the sugar in a heavy-bottomed saucepan over medium-high heat until dark caramelized.
2. Pour the caramel onto the parchment.
3. Add the vanilla caviar to the caramel.
4. Peel the apples and cut into quarters.
5. Break the caramel, chop it to a crumb state.
6. Turn on the oven at 350F with blower.
7. Line a baking dish with parchment, sprinkle half of the caramel chips on the bottom and flatten.
8. Arrange the apples with a nice cut down, sprinkle with the second part with caramel chips.
9. Top the apples with the prepared dough.
10. Place in oven for 30-35 minutes.
11. Flip the pie onto a plate while still hot.
