Apple Pie
For the pastry:
125g salted butter, softened
½ cup castor sugar
1 tsp vanilla
1 egg (plus 1 extra egg for egg wash)
2 cups cake flour
1 tsp baking powder
For the filling:
6-8 apples, peeled & sliced
Juice 1/2 lemon
1/2 cup brown sugar
1 tsp ground cinnamon
1 Tbs cornflour
1 tsp vanilla
Cream butter and sugar together and add vanilla and the egg, beat well to combine.
Combine flour and baking powder, then add to wet ingredients and mix and knead lightly to form the dough. Divide dough into 2/3 and 1/3. Cover and leave to rest in the fridge for 30 minutes.
In a pan, combine apples, lemon juice, sugar, cinnamon, cornflour and vanilla then cook over low heat until the apples soften and the sugar melts. Remove the Apple as from the pan and set aside. Continue to simmer the syrup until it has reduced and thickened, then pour over the apples and leave to cool.
Roll 2/3 dough out to a circle big enough to line pie dish. Dock the pastry base with a fork then blind bake at 180C for 15 min to set. Brush the pastry base with beaten egg as soon as it comes out of the oven.
Fill pastry base with cooled apple filling. Roll out remaining pastry and cut into desired shape(s) to top the pie. Brush pastry top with egg wash then bake for 30-40 minutes or until the pastry is golden and crisp.
Leave pie to rest at room temperature for 5 minutes before slicing.
