If you were to cook large batches of custard (from powder, unfortunately) would you run all the same steps and temperature except the steam?

The ICombiPro has a dedicated CheeseCake button/mode as well! I believe I also has a dedicated NY Cheesecake button too, I'll have to look when I get a chance, as usual it's always being used at work!

Theres always some water on top of the creme brulee, because of the steam..
