Recipe for 10-12 apricot dumplings
380 g coarse-grained flour
380 g curd cheese (20 %)
2 eggs (size M)
1 yolk (size M)
90 g melted butter
1 sachet vanilla sugar
a little grated lemon zest
1 pinch of salt
Apricots and sugar
butter crumbs
150 g roasted breadcrumbs
3 tbsp melted butter
1 geh. tbsp sugar
½ sachet vanilla sugar
To make the dough, sift the flour onto a work surface. Add the remaining ingredients in turn and knead quickly to form a dough. Leave the dough to rest briefly (approx. 10 minutes)
Shape the dough into a roll on a floured work surface and divide into 12 pieces. Pit the apricots and fill with a little sugar. Flatten the pieces of dough, place the apricots on top, fold in and roll into dumplings.
Cook the dumplings in simmering water. When the dumplings rise, leave to stand for approx. 2 mins.
For the butter crumbs, mix the breadcrumbs with the butter, sugar and vanilla sugar and roll the cooked dumplings in it.
Now sprinkle the dumplings with the breadcrumbs and you're done
