Thanks for the video! I was thrilled to hear your speedskating story. Back in the 90s I managed the relationship between DMT and the US Speedskating Team which is where I got the stones that I still use to this day.

Glad to see you doing an instruction/review video again. These are what drew me to your channel. I hope you will further compare the Atoma and DMT plates as you hinted. It would not hurt to revisit some of the old topics to catch up on what has changed.

The biggest surprise is that my chinese diamond plates worked better than my ultra small DMTs 😦 ( the super small plates to sharpen skates etc ...)

That Dans black translucent surgical stone gives me such INCREDIBLE feedback, I feel that all others are just a point of diminishing returns, better perhaps but such a SMALL ant better for usually WAY more miner. I learned this from you Ryky,keep it high quality and simple and your expertise will grow ! Leonard

I have a fine DMT bench stone and love it, use it on almost everything I own and I'm slowly getting more and more sharpening equipment as I learn how to maintain my cutlery.

Thanks for your great videos - I have a question for you... I have a Shun Rocker knife and I love getting it super sharp following your techniques (after getting a nice new Chosera 800 Grit Stone). My problem is KEEPING it sharp. I'm careful what I cut but it seems to lose its sharpness rather quickly. I was wondering if there is something else I can do to keep it really sharp between uses. I find that I let it go for a while and then when it gets dull, I sharpen it again it takes me like 30 minutes to really get it sharp again. Thanks! Can't wait to get your knife when it's ready. I ordered one the first week it was available.

Could you review the DMT Díasharp plates? I love my course plate and with my DMT 160 grit lapping plate I can reprofile and sharpen any knife. But I was wondering what you thought of them and how good the extra fine (1300 grit) stone is.

I’ve done a dozen shun chipped blades using diamond plates this week. I’ve just been on a kick with them lately. I’m not going to compare in this comment but It did the job and they came out great. Several hours of work. As Carter says, it’s 99% technique and 1 % tools. Maybe I’d say 90 or 95% but it really is practice makes perfect

I have recently purchased a Shun Premier 8' Chef knife. I am wondering if it is true that Japanese knife manufactures put a vinyl clear coating on their blades for shipment and how to tell if they do. Do I need to take Acetone to my blade to remove this coating if it is even on the blade. Anyone know the answer to this. I am skeptical becuase I dont want to do any damage to the handle.

Thanks for sharing your opinions on the DMT! Not sure if you will check any comments on such an older video but I was wondering if you ever did a review of the red/green DMT plates for sharpening? Wasn't able to find it. There is a German KZbin chanel (and cutlery) posting quiet a bit on sharpening and they strongly promote DMT products (not sure if I can name them here without this looking like SPAM). Anyway, would be really neat to have your opinion on sharpening (all to the end) with DMT plates!! Sorry in case I missed any existing content on this.

I have the DMT diasharp continuous surface stones and they are awesome at working with high alloy steels. They remove material very quickly and it doesn't take a lot of time or effort to maintain my edges. They do take about a dozen sharpening sessions to break in as there's some high diamond particles that need to be knocked off. So expect some deeper scratching until they are worn in and try your best to cover the whole plate during the break in period.

One thing to consider with diamond plates/stones and "grit size"... A smaller grit size can create a larger scratch pattern if its loaded onto a surface rather than suspended in resin or another medium. So fine plates might cut faster than medium resin bonded stones. Doesnt mean they dony have their place, but it is definitely something to consider.

Hiiiiighly recommend trying to sharpen a knife on the DMT coarse side (blue) and then stropping, it creates a ridicccculously keen edge, much better than their fine or extra fine etc, which is very surprising… but they realllly nailed distribution of the grit on their coarse stone formula, it’s insane

QUESTION..... WHY DON’T YOU CHOSE THE DMT 10 X 4 series for your plates, then drop down to a Dans hard translucent surgical stone 12 x 3 X 1. Given the knives you sharpen I can’t fully imaging why not unless they are not course enough. Their surface area is unsurpassed for larger knives. Just wondering. Personally I do not care for the perforated coated surface of your topic plate, too much surface area not diamond coated, no advantage I can see to that. But you always keep it interesting. Leonard

ha as a former speed skater myself Im so glad to know Im not the only one who is familiar with sharpening with DMTs for skates but not what they were made for which is knives. I have a Red(600mesh fine )/blue( 325mesh corse) plate I may just get a holder for it and use that because I was thinking of going for a Cerax 1000.

Sharpening speed skate blades Im ok, knives are a diffrent story due to the being able to find the burr on speed skate blades are much easier. Also for me it was easier to sharpen because all I had to do was manipulate the stone and not the blade itself and I was told by my coaches that when using a diamond stone since they take off so much put VERY little pressure on the stone. So the technique is much diffrent for me with knife sharpening because i have to hold my blade itself and make sure the stone is stable. thankful for your page. Its pretty much all i use in regards to knife sharpening. I am a bit confused on if I need a #800 stone and the Cerax 1000 for everyday use or would just the #1000 be good. Im a home cook so Im not cooking intensly or using my knives that much .

@@Burrfection also was wondering when you skated, what boot maker did you have? mine were bont but then due to fitment issues I went with Bruce Kohen. Apollo Ohno's maker, hes quite amazing, his boots are a work of art. All entirley hand made by him in a tiny studio in Missouri.

@@Beliserius1 Nothing special about the victorinox , just a basic 420 aisi steel , super soft and can't be even compared to a Japanese steel. I own one :) , they are good kitchen knives for families etc

@@dimmacommunication I know, but like 2 years ago he said he wanted to prove America's test kitchen wrong. Plus, I dont think japanese or higher carbon steels are necessarily better. Imho, for 90% of tasks, especially with a chef knife, 0.5%-0.7% carbon is perfect. Going higher like Shun and you'll get a chippy edge, go lower like lower end Mercer and you'll have to sharpen too frequently.

@@Beliserius1 True, if you need a steel like 420 I would advise Sanelli, Italian quality made. Better than Victorinox for sure :) ( own both and a japanese ).

@@dimmacommunication Honestly, I think Victorinox is a bit over priced for what they provide. 0.5% carbon steel knives, 420HC type, are available from companies like Winco for a fraction of the cost. I've also had great luck buying 0.7% carbon knives from China for even less than that. I have sharpened a few Shuns, MACs, and Globals. While globals are great in terms of workmanship, their handles aren't my thing. MACs and Shuns on the other hand don't have great workmanship imo, far worse than Wusthof. The wooden handles don't sit flush with the enc cap on Shuns, and MACs just felt like a pretty average for a forged knife.

A plate is a stone for all intended purpose. Plus they stay flat, a stone needs redressed regularly. Your right, the Aluminum ones will wear away. Especially if used regularly. I used to use them as a replacement for Arato. To remove rust and chips on Swords. So I am speaking from the Hard use perspective.

I have had a rod type diamond stone I’ve used for years for my pocket knives etc, go,t a chip, on a GOOD. Glass? This rod will clean it up. Cheers from NJ

Trend: Dual sided 900/1000 DMT basically glues the diamonds to the surface. Trend embeds them in tungsten--the blocks last almost forever.
