My father used to sell kitchen equipment for Hobart , service guys wouldn’t touch any equipment that had “moving or dead creatures “ . You’d think with many restaurants closed during COVID, they would have taken all this free time to do some cleaning up . Naw .

Would have been a good thing yes. But no income means no staff, so it didn't happen. Especially if this happens in the restaurant, cleaning will not be the chefs and/or managers toppriority, so they won't let the staff get some hours on cleaning.

on the flip side, cleaning takes time and resources to expend when they aren't making any income...so why would they expend resources to clean when they aren't bringing anything in?

If you like eating out do not become a commercial refrigeration field service tech. I use to keep a list of restaurants that I would never go to, but it was easier to make a list of places I would go. The list is much much shorter. 🤢🤮

Facts. I use to work for a commercial kitchen equipment service company we had a book among the guys that list the don't ever eat at restaurants. I've seen so much disgusting things it's a wonder these places pass health inspection.

That’s how it was when I was a manager at a major fast food chain our HVAC company made me aware of a mouse issue. Closed the restaurant for the remainder of the day, pest control set traps, all of us deep cleaned and we where good to go.

Yep, chain restaurants are much more likely to be clean than independents. I have glue traps for roaches and traps for rodents store-wide that I check daily, and if I see ANY sign they have caught anything it's an immediate call to pest control for emergency service.

I'm new here, I'm a retired automotive mechanic, heavy and passenger, I've also worked for years in industrial engineering. I wish I'd had a boss with your ethics and working style, I could've started my own shop but was too chicken I suppose so I worked for others. The only times I had jobs where repairs and parts buying weren't a huge issue was industrial company's because they were so big anyway but most still didn't have your moral outlook on work. In another video you called yourself probably a jerk to work for but I would've loved to work for you! Your work ethic and moral approach are exactly mine!

You certainly went above and beyond to help your customer salvage the cooler. Most would have told them to replace the unit. When removing grease/crud from kitchen units (especially in a confined or inside area), I have had better success with a small portable steam cleaning machine than chemicals and hot water. Faster grease removal and less water saturation/mess. Unfortunately a decent steam unit will cost $500-$1000.

A few years ago I got a call-out from a Sonic restaurant that a reach-in was hot. I popped off the bottom grate and shown a light in there. I couldn't believe what I saw. The condenser fan shroud was packed solid with dead roaches! The fan couldn't turn. That's one of the very few jobs I ever turned down. Looking around, the rest of the kitchen was about as filthy. You're absolutely correct about not calling the health department but I came real close to making an anonymous call.

Personally I would do a cost comparison. Have the tech look at it, and give an estimate as to replacing parts vs replacing the whole unit. Whatever is cheaper I'd go for.

In case you didn't know, those 3 wire wago connectors have a little hole in the top that you can jam your multi meter in to test.

A lot of modern meters come with probes that have high safety ratings, unfortunately the high safety ratings mean bulky insulation and very little exposed metal. So they often can't get down into small holes like those in Wago 222 connectors.

Had a compressor leak like that on the stub, customer was retiring in a few months and didn't want to put any money into the cabinet so I cut the stub off with a hacksaw and silver soldered a piece of copper in. Was still running years later with new owners.

It’s not legal to do that. It is just like fixing a crack on an air compressor tank. Just be aware that there is liability there. I know I also did it once, a long time ago before I heard about the liability.

I like your videos, because i work on the exact same units, with the exact same roach problem, for the same customer. Only I'm based out of Texas and we have their account for this while regional area. I spend many hours cleaning these units of grease and roaches too. Over 75 stores we have the account for I would say. I've also wanted to post videos of my service work but haven't done it yet. Its nice to watch someone doing quality diagnostics on the same models that i work on too. Thanks for the videos.

people dont know how gross most restaurants are. ive been cooking for 15 years and some of the places i worked at were disgusting. deep fryers that were never properly cleaned, soda machines never cleaned, ice machines never cleaned, dish washers that dont use sanitizer cause the machine is broken. one place under the deep fryers hadnt been cleaned in probably 5 years, it took me an entire 2 months of cleaning to get back to what it should be. no one really wants to put extra effort into a job that pays them the minimum for the job.

When a compressor with a vacuum on it is shaken, nitrogen bubbles in the oil float to the top. Warming the oil up a bit would probably help. Having been in HVAC myself 10 years ago, it's nice to see how much better the tools you have now.

21:07 in tight spaces i always do a dry run with the torch tip before firing up, i've saved some aggravation doing that over the years.Also good to keep a squirt bottle handy, they help a lot too.

Once I had to do a PM on a 7 eleven and they had some roaches in there small freezer after told the manager they fixed the problem really fast.

If the roaches are that bad in that machine its that bad in that whole kitchen, if they have a pest control company they aren't doing shit, thats a really bad infestation .

It all comes down to good housekeeping. Take away the food source, they have fewer reasons to stay. That being said, it's never 100%. This is why many counties like mine require the foodservice industry to have monthly pest control visits. It's part of health code. When the inspector visits, they want to see monthly invoices proving your compliance. This, on top of looking for good housekeeping practices, following food safety guidelines and documentation proving the crew has obtained food handler cards.

I know two things about roaches: 1. They’re not meaningfully less sanitary than any other insect (which doesn’t mean much when they’re living inside your kitchen equipment) 2. If you see one roach, there’s a million others you don’t see. Glad this place handled the issue well.

I own a billiard room in Saint Augustine Florida and for a while I had a roach problem which seamed to reoccur no matter what I tried to do to get rid of them. Then one day a friend suggested "Avert DF". It is a dry flowable roach bait. I purchased a few tubes of it from Amazon. Then I applied the product inside all electrical outlets, light fixtures and behind all of the refrigerators and any openings under the bar. To my surprise, I have not had a roach problem since then.

I had roaches keep shorting the boards out on an Electro Freeze machine. Warranty was fed up with it. Pest control guy got screamed at. And we got scolded for telling them why it kept breaking 🤣

I am a home appliance repair technician. You ain't seen half the roach problems I have. Many of the home appliance problems are due to infestation. Roach nest in control boards. Dead mice stuck in fans. I will never forget this one home. The floor was completely covered in dirty clothing and trash. Suited up in tyvec, gloves, and dust mask. As I pulled the GE fridge out. Three cats caught and ate the escaping roaches and mice. The unit had a mouse nest in the defrost drip pan. And roach nest on the control board. Took a brush and contact cleaner to the control board and vacuumed out the mouse nest. Unit ran fine. Logged to never return to address again regardless of tennant.

Once I worked on a reach in inside the restaurant and when I opened the units back a boat load of critters came out! As I grew up around them I just kept working and finished the job. You are so right! As technicians we are not the health police so calling a company in only slices our throats! Great video!

I noticed the same. In Europe the WAGO style connectors are more or less standard. You never see wire nuts. Mostly you would see DIN rail mounted connectors with screw or spring terminals.

Wire nuts are soooo 1990's in many parts of Europe now... they still sell them here, but I would go with the lever Wago's any day when dealing with wires up to 2,5 SQmm. Good old screw terminals for thicker. The lever Wago's can attach to a single wire, they can be used with mixed wire sizes and types, can be attached and detached one wire at a time without accidentally wiggling other wires free.

Cork tape is the devil. I whole heartily agree. Roaches I always push to the customer to handle the problem but I don't go tattle telling to the HD. Good job brother.

@@cliveramsbotty6077 just my opinion. Cork tape when over lapped on it self becomes ungodly sticky and you have to either rip or cut it off. Then your fingers or gloves are sticky. If it's old and been on a frosty/sweaty suction line it gets slimy.

I service an unnamed branch of the military mess halls. The roaches are the norm. We ignore them and just fix the units. What’s worse is the mice pee on the components and they short out frequently. Anyway, I’ve found that those dual evaporator boxes will use a higher low side pressure when both solenoids are on so we remember that when diagnosing and charging.

Im a line cook for the past 15 years in Colorado. We get lucky it's really rare to have a roach problem here but we have mice problems in the winter but proper storage techniques and staff that care and you will never get food that is contaminated. I never serve anything I wouldn't eat myself.

Great evacuation set up. We bought all of the state of the art fieldpiece equipment for our training center, last year. The key is, after your evacuation, to get they system into a positive pressure with charge as soon as you can. I don’t care how good your connections are, all hoses leak, and it is imperative not to let the system sit in a vacuum after you turn the pump off.

Good vid ! My first introduction to cockroaches was about 35 years ago when i was just starting out in servicing ice machines. When i opened the side panel of the ice machine in a chinese food restaurant they all came hauling ass out and ran up my arm ill never forget it for as ling as i live it seems like. I Really Have not seen a issue quite like that anymore ( i dont work in chinese restaurants anymore ) ive heard that they cone into restaurants from the produce deliverys. ( i dont know how they get there ) I have noticed it seems only chinese & Japanese Restaurants Get the Bad Roach infestions for the most part. I have a client that got roaches from the japanese neighbor restaurant & the Whole Building Row Had to be Tented. ( Last Year ) The Other day though i saw the Biggest Roaches ive ever seen in my Life - ( it Reminded Me of the Men in Black movie ) They Were about 3" Long & almost an inch tall. Big , Fat Healthy Looking Sob's. They Were Behind a Huge Electrical Panel For All of a Big Building Block With Restaurants in it. if These Roaches Get any Bigger They are Going to start scaring away Dogs. First time in my life ever seeing Roaches that Were that Big ! As a Rule i Don't See Roaches in the Majority of Restaurants i service.

I don’t think I could do food service work. I do commercial and industrial hvac, just did a tandem compressor changeout on a 30 ton carrier this week, I left it on a vacuum for 3 days, pulled down to 214 microns. That wet rag stuff doesn’t work as good after the first use. You do very thorough work also. I hate cork tape too.

This video encompasses so many aspects of our job. The only thing I'm just jealous of is you being able to remove this unit from the kitchen area. One of the worst parts of our job is doing all of this work on a slimy knee pad in the middle of a kitchen while cooks are working around you. Put a couple hot fryers next to you and 2 cooks reaching over you saying excuse me the entire time and that will seem normal haha. Good video man. Still can't believe they'd spend that amount for this work and not just buy a new unit. 🤦

I would be sorely tempted to run the torch over that whole unit and see what survived (hopefully nothing). There's no way that was an economical repair.

"Spilling" a bit of Boric Acid in the reach-in would solve the problem. I worked at a place that had a bad roach infestation, they were living in the walls, me and the kitchen manager searched the internet for possible solutions because pest control used nasty chemicals where they would need to close the kitchen for a couple days for the smell to fade. Anyway we both found boric acid as a solution to the roach problem. Boric acid is extremely safe dentists prescribe it for patients that have gum issues to brush with, and it is extremely effective on roaches. The big plus is that when it kills the roaches you don't see dead roaches, they get the boric acid on them and take it back to the nest where they die. Bonus Nachos, it's super cheap. Super cheap, super effective, and not harmful -just don't breath it- it is a lung irritant. But many of the chemicals you work with are not good to inhale so you just plan accordingly.

I second this. Terro makes ant baits using a thickened mixture of borax and it is by far and above the most effective ant traps I have ever used.

I think from the manufacturer point of view, the case is the most expensive part and the rest are lego bits so they will pay for all the components to avoid losing a expensive stainless case.

In my experience as a computer technician you can have roach problems even in office buildings. Roaches are drawn to the EM fields emitted by electronic equipment. I've seen them infest printers, scanners, computers and even desk phones. Sometimes that blue screen error your computer keeps having is because there is literally a bug in the system!

@Ben T. Normally you have a company come in and spray for them. In extreme cases they may have to tent the entire building and fumigate. That gets the ones living in the walls but takes about a week before people can return to work. In one building I worked at spraying and fumigation were not an option. They did fruit fly research so spraying ANY kind of pesticide in the building would've effected the fruit flies. The only option for roach control in that place was glue traps impregnated with roach mating hormones so as to attract them to it.

I have a serious question...are you obligated to notify the health department when you discover this kind of situation? Those roaches must be all over that food business. I sure don't ever want to go there.

Why would he do that? His job is to fix equipment, not be a government official. I worked in restaurants, saw roaches, noped out of there but I didn't report them. I was a vendor. I saw a lot of kitchens, from disgusting to normal to clean. It is what it is and that's what health inspectors are for.

@@etherealrose2139 Health inspectors can be bought off, and anyone can report a restaurant to the health department, but they give a notice of inspection most likely and the restaurant or whoever will do a snap cleaning to make it look good enough to pass the inspection...

@@GoatzombieBubba They can do random inspections. Worst I've ever had was a dishwasher that wouldn't quite make it up to rinse temp. But really, the health codes are simple and very easy to follow. Only lazy people don't want to follow. It doesn't cost anything to do it right the first time. As a side note, an HVAC tech would not need to be a mandatory reporter, so they wouldn't be required to tell the health department.

Where I worked, we called this a snowball job. When I was young, I made the mistake thinking I could fix anything that came my way and quickly learned after quite a few of snowball jobs, the best technicians know when to walk away. As Dirty Harry said "a man has to know his limitations." I would chalk this one up to experience. In the end no one will be happy with this piece of equipment ,you or the customer. God love you but this is one piece of equipment that should have been replaced.

Hey Chris, you should invest in a mini oxy/acetylene torch, they are very handy when working in close quarters, and cuts down on open flame. It's also good when brazing solenoid valves, and expansion calves. it comes with the hoses that hooks up to your regulators. I didn't believe at first it would work, But for small tubing, works real well. I worked many times with Refrig. equipment that was infested with roaches. They use to get under the contacts of a contactor, (open contacts) on a 3 phase, and insulates a phase, and causes single phasing and wipes out a motor, or compressor.

Tony Strollo we had three sets of mini ox acetylene torches. They were like jewelers torches and had all kinds of fancy tips, to get into tight places, and behind where you could not see. Only problem with ours, was that the torch handle had non removable braided hoses, that all ended up leaking. Even the regulators were miniature.

From the perspective of someone that does commercial pest control, I can bait and treat to the extent of the law but if there's any food, they're going for that before the bait. The places that are on top of their cleaning don't normally have issues with roaches and the ones I have the most problems at don't stay on top of it but it's always our fault for not working magic. That infestation looks like it's been there for a long time and I'm guessing management there hasn't been specifically stated where the main issue is or the tech can't really access that area. On the other hand, that very well could have gotten to that point from a lazy tech.

These food prep coolers tend to get nasty. All bars n restaurants have roach problems. They come in on produce orders, and are hard to totally eradicate. We had a popular Mexican restaurant in St Paul for years, its name was La Cuccaracha. I also worked at a Cafe in the mid 70s, yes we had Icelanders back then. We had cockroaches that would fall in the ice machine when it was done making ice. So we would scoop the top foot or two of the ice and toss it every morning when we got ice for the day. I was told they were attracted to the heat n oil at the top of the machine.

OMG here comes lunch! BLECH! Nasty is not the word for it. We had a unit (not refrigeration) come back for repairs from out of the country. It was so caked in sand dust that it was tan instead of its normal color and when we removed the covers, we were able to pour sand dust out of it. The shop crew said it was the nastiest unit they ever worked on.

I like how you ended this video, it is usually an unforeseen problem on things like this, or they are connected to another building and the area tends to play a roll as well and like you, when the manager is made aware, they usually jump right on the problem and rectify it. I have only had one restaurant tell me they could care less and if I wanted to call on them they would just pay off the inspector like they always do. Needless to say, I don't go there anymore and it really does no good to tell people about it either, so I just say, when ask, I have my favorites and so do you I am sure.

Had an uncle that delivered bread to restaurants. He always said you wouldn't eat in most restaurants if you could see the kitchen/storage. He also said the nicer (more expensive) the restaurant the worse the kitchen normally was. Think about it. Most fast food restaurants you can see into the kitchen. In and under almost everything. You can't see the kitchen in most other types of restaurants.

I think there are perhaps tax issues. In my country, maintenance and repairs are 100% outright tax deductable. But capital expenditure is not.

Good Point. Alternatively, he mentioned that the equipment was technically still under factory warranty (obviously it wouldn't cover this). As a result, repairing the equipment was the only option the (I assume chain) restaurant had, if they wanted to save their own jobs, since any attempt to replace the equipment would have raised red flags at corporate (ie why didn't you file a warranty repair).

I guess you are not allowed to weld on the suction stub, because it is part of a pressure rated vessel. I once welded a crack shut on a compressor dome, for a 5 ton water source heat pump, before I realized, that was not legal to do. We used a portable TIG machine, a Miller Passport, I believe, and silicone bronze rod. We ran a bead over a hairline crack on the side of the pot. That repair lasted for years, until they tore the building down. Great job you did on that ShitShow. What was the total bill? I would have sprayed that copper to steel joint with cold galvanizing compound before you wrapped it with the cork tape. At least it wasn’t a copper to Aluminum joint. Those were the worst for corrosion, as the dissimilar metals caused electrolysis. Used to happen where the stubs came out of old Signature chest freezers I used to repair in the 70’s. I would have to cut into the cabinet. We used an epoxy coupling called a Permacouple back then. It was a coupling made for dissimilar metals. You inserted the copper and aluminum pipes, then heated it with a propane torch. The coupling then shrunk down on the pipes, and epoxy melted and sealed the coupling. They worked very well. I once repaired an antique built in refrigerator on an old yacht with those couplings. I remember wrapping the joints afterwards with cork tape. We called it “Monkey Shit”, back in the day, when I was attending the Navy’s RAC school in San Diego in 1974.

clive ramsbotty it’s just paint. It comes in a can that you can brush on, or a spray can. It contains a lot of zink. We use it anytime a protective coating gets burned off during welding, to prevent corrosion at the joint. You should be able to find it online under cold galvanizing compound. OEM HVAC equipment manufactures actually coat their drier braze joints with it, and also coat around steel compressor stubs where the black paint burns off during brazing. It looks like thick dull gray paint.

If there are roaches in that unit they are everywhere else as well. I hope that they got a good exorcist when it came to the roaches. From my point of view the electronics should have been better encapsulated to prevent the roaches to even be able to get in there, so from that perspective it's a manufacturer issue.

Well when I silver solder (braze( my components, I turn my torch down and I also have shields in place for the purpose of not burning other components, so take this as you may I'm just saying ,and torch that is turned down does take longer but taking your time will pay in the future along with a few sizes of shields to prevent damage to other parts ,I've been doing hvac for nearly 28yrs now ,you sound smart but I believe its book smart from what I see , sorry that's how i feel ,i mean when the dryer becomes damaged there's 2 things that cause it 1 too hot, 2 shield the in and out of the dryer with some type of small a metal shield,so there you go my thoughts I realize some things are hard to do with components that are close to your work area,bottom line look at the problem and use head and repair things with common sense not a full on 600 degree torch,turn it down may take longer but that's life

Many years ago I worked doing warranty and non-warranty repairs of consumer electronics and I would often get units that were roach infested! It was nasty and customers often didn't understand that roach infestation is NOT covered under warranty or extended warranty. Roach infestation has to do with the unit's environment, not manufacturing defects or design issues. After doing enough repairs, I got to recognize when to expect a unit to be infested: A distinct smell, typically an apartment and typically by last name of customer. Without using chemical, I would take canned air flipped upside down to freeze kill the critters when opening the unit.

I’ve had some great pest control providers. You have to be willing to pay the price and you have to do your part to eliminate food sources and harborage locations and usually restaurants are too stingy to do either.

We have a certain HOUSE that has these same problems and it seems like I have had to do these same repairs on the same equipment at times. I've never thought to use the cleaner like this though, but I have sprayed it down with sanitizer prior to working on it.

Hard to imagine all of the repairs and your labor was cheaper than replacing the entire cabinet. I wouldn’t have touched that unit with the roaches. Guessing the ethnicity of the restaurant that unit cane out of.....been there done that and abandoned the unit. Disgusting! Good for you to stick it out and go the extra mile...curious; do you use the customers rags or purchase / provide your own?
