Grilled chicken thighs are a favorite for us at home, we eat them at least twice a week usually served up in tacos topped with salsa and on top of a bed-liner of guacamole. But why should you be deboning them yourself?
It’s a long story, but it starts with the crispy skin. To me, there is nothing better than a crisped up chicken skin to compliment the juicy and moist meat. Lately I’ve found that in most stores, the deboned thighs come with the skin removed, so that is no go for me.
The second reason is that it actually costs less for the same amount of meat if you purchase chicken thighs with the bone-in. Nine times out of ten most are trying to be economical about their spending, especially these days with the prices of meat. Buy bone-in chicken thighs and deboning at home is an easy way to save a little money without sacrificing on flavor.
The last reason, well, I like to play with knives! Lol. It’s always good practice to sharpen up your tools and practice your trimming skills. This is a good opportunity to bust out your favorite knives and get some practice in.

The absolute most important part... never ever throw them bones away. in my opinion thigh bones make the best chicken broth. carrot scraps, onion ends, and some celery tops in there, hand full of herbs, salt, pepper, I even grill 1-2 of the bones to throw in the stock pot, adds just a tad bit of the smoke flavor to the broth.

Oh yeah! Chicken thighs are my favorite part of the chicken. Anything around here that's boneless is also skinless. I'm like you Arnie I like the crispy skin. I swear algorithms can read minds now. I was literally thinking about looking up how to debone chicken thighs today for some Korma I’m making and this pops up in my recommendations.

Thank you for this tutorial. It really helps me because I can get chicken thighs with bones on sale and with a little bit of work I’m getting good chicken while saving money.

I sometimes use the excess skin and fat to make cracklings (especially nowadays when producers leave it to add more weight...). Be perfect for your salsas. If I'm not making them that day I'll bag a bunch as I breakdown my family packs until I have a ton. I just fry them over medium-low to low heat until they're completely crisp and golden, drain and add some salt while still hot. Sometimes I add a little onion to them as well to make "gribenes". I save the rendered fat for schmaltz. I debone them sometimes as well. Normally I make broth with them, generally for part of the meal I'm making that day, especially in my gumbo. Deboning chicken before its cooked goes against everything, cant tell me your mother agrees lol but still looks good tho😋

@Joshua naw bro my Momma loves like that too haha. I do cook them with bone too quiet often, like I said we love chicken in my house. We chop it up and put it in our salads too or chicken and rice, yea buddy!
