Ingredients*:
About 1 kg pork shoulder, trimmed and cut into bite-sized pieces
3 red onions
2 carrots
Salt and pepper to taste
Spices of your choice- we used dried thyme, rosemary, oregano, cayenne pepper, paprika
4-5 bay leaves
Extra virgin olive oil
This recipe serves about 6 people. Feel free to adjust the quantities based on your preferences and the number of servings needed.

Instructions:
Heat a large pot or Dutch oven over medium heat. Add the pork pieces in batches and brown them on all sides without oil. Place the pork with the fatty side on the bottom of the pan.
In the same pot, add some olive oil and crudely chopped onions and carrots. Cook, stirring occasionally, until the vegetables are softened and slightly brown, about 3-5 minutes.
Return the browned pork to the pot and add water, spices and bay leaf. Season with salt and pepper to taste.
Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 1 to 2 hours, stirring occasionally, until the pork is tender and the flavors have melded together.
Once the stew is done cooking, taste and adjust the seasoning if necessary. Remove the bay leaf before serving. Meat is so tender it falls into pieces.
Serve hot either on its own with broth or with some side dish, mashed potatoes, roasted vegetables, rice, noodles or salad. Enjoy the delicious and satisfying flavors of this easy, high-protein pork stew!

Riporta il maiale rosolato nella pentola e aggiungi acqua, spezie e alloro. Condite con sale e pepe a piacere.
Portare a ebollizione lo stufato, quindi ridurre il fuoco al minimo. Coprire e cuocere a fuoco lento per 1 o 2 ore, mescolando di tanto in tanto, fino a quando il maiale sarà tenero e i sapori si saranno amalgamati insieme.
Una volta terminata la cottura dello spezzatino, assaggiate e aggiustate di condimento se necessario. Togliere la foglia di alloro prima di servire. La carne è così tenera che cade a pezzi.
Servire caldo sia da solo con brodo che con qualche contorno, purè di patate, verdure arrostite, riso, tagliatelle o insalata. Goditi i sapori deliziosi e soddisfacenti di questo stufato di maiale facile e ricco di proteine!
