Artichokes, spring garlic and Spanish ham stir fry | Alcachofas y ajetes salteados con jamon

Artichokes are one of my favorite vegetables because of the unique and incomparable flavor. It is so particular that there is no other like it out there with that licorice flavor. Spain is the second-largest producer of artichokes in the world and January is the peak season for it, even though you can find them from as early as September and as late as June. This recipe is a classic, cooked at home as well as found in so many tapas bars across the country. Simple Spanish food at it’s best.

Have you tried artichokes atuffed with jamon and cheese what stuffings are usually used in Spain i think pine nuts could be used as well

I have tried them and the reason ham and cheese works well is because the inside of the artichoke is so small that only bold intense flavours can match the artichoke well. Pine nuts is very common as well for a filling
