Thank you so much for your video! My youngest daughter and I have been making bread for years, but she's living in an Airbnb right now, without much of a stocked kitchen. No mixer, no Dutch oven, which is how we've been baking it in. Your pan method is btilliant! Making my first loaf this morning. Also, you are a rare KZbin that doesn't have annoying background music and who knows how to GTTP (Get to the Point!). No incessant yanking! Love that! Going to make Rye next...hubby is so excited!!

The recipe (for those who would like a quick summary): 1. In large bowl, mix: • 16 oz (i.e. 475 mL) cool tap water • 1.5 tsp salt (use less if you are salt-conscious) • 1/4 tsp instant yeast • 1 tbsp sesame seeds • 1 tbsp flax seeds (ground flax may be healthier) • 1 tbsp EVOO (extra virgin olive oil) • 3.5 cups whole wheat flour (or 2 cups bread flour + 1.5 cups whole wheat flour) • ½ cup oats 2. Cover bowl with plastic wrap, then let it sit (i.e. proof) 8-24 hours at room temp (e.g. overnight) 3. Oil/grease bottom pan 4. Mix dough a little (to de-gas/pull/stretch the dough, but whatever you do, don’t call it kneading!), making sure to scrape the sides/bottom. 5. Sprinkle oats on top of sticky dough, roll dough ball around so that oats mostly coat the surface. 6. Transfer to bottom loaf pan, cover it with same-size top loaf pan and use two metal binder clips at each end to secure the top and bottom pans together 7. Let dough sit (proof) in pans for another 30-60 minutes 8. Preheat oven to 400F, move top rack to lower third of oven 9. Bake for 40 mins at 400F with top on, then another 3-15 minutes with top off to brown the crust

Love it. I don't know if it is "cheating" but I mix it using a stand mixer and dough hooks; a little disabled, so I do what's easy. A suggestion: I use "atta", or Indian whole wheat flour. It develops gluten well, and is a bit finer grind than most "western" whole wheat flours. It may need a little more water as it absorbs well. Maybe subjective but I think it gives a nice structure and good loft.
@iluminameluna2 жыл бұрын
I'm in the US so I'm not sure you can find atta here easily, but any finely ground, red wheat flour with a good protein content should work. I found a good recipe that also "cheats" by soaking the entire whole wheat flour content of the recipe with all the water, THEN adding the rest of the combined ingredients together. So, 16 ozs of water + 1.5 c whole wheat, soak for at least 4 hrs. Meanwhile, combine the rest of the DRY ingredients. Once the WW flour mash is ready (no matter how long it's been soaking), add all the other ingredients to it, then continue with the recipe as indicated. Trust me, you'll get an AMAZING loaf of bread. Fluffy and flavourful. I've got fatigue and pain issues so I've left my mash soaking up to 2 days, so I've had whole wheat loaves that have had a very faint taste of sourdough, but only I've noticed it. My kids (the grown men and my grands) have inhaled it so there wasn't much discussion about it. The grands in particular haven't even commented on the fact they were eating whole wheat! They thought it was dessert! 🍰 🤣 💯 And it ALL began with Steve, the rocket scientist...

The elderly often have bad teeth or false teeth. If so the will find it hard to eat. If you brush butter on after baking it will be softer. I personally like chewy bread over soft. But my husband likes soft. If sharing with the elderly try baking more small loaves to share. My husband and I are 73 & 78 and we don't eat a lot of bread before it goes stale. You seem so sweet. This was so peaceful to watch and so instructive. I don’t have bread flour but heaps of oats. Maybe I’ll make an oat flour bread? Anyone have any idea if that’ll work? Also, I’m sure you know but just wanna say they have silicone bowl covers so you don’t have to go through so much wrap. A great space and money saver! I love em

Delicious and super easy, I baked in two 9" rounds ( I have a small shallow toaster oven ) and I replaced the flax seed with some chopped walnuts. Thank you Steve for great tutorials!

Thank you for this! My boys loved the homemade bread as comforting foods are welcome as we are self-isolating. A warm moment in a tough time. My youngest said I should become a baker:)

Steve!!! I want to thank you for this marvelous recipe. I started it last night, baked it this afternoon and have just finished tasting it. It is easily one of the best breads I have ever had. It reminds me of the bread from Sandholt, a wonderful bakery in Reykjavik, Iceland. This is only the third time I tried my hand at making bread. I used New York Times recipe for no-knead bread the first two times. They were decent loaves, but I wasn't in love. This time, it turned out a soft, billowy and moist bread. After opening the top, I baked for 10 more minutes. This one has a soft crust, which is easier to slice through. Honestly, I cannot imagine dolling out more than10 bucks for a loaf of bread, which is the going price in my city, when I can easily make the best bread from home with hardly any work at all. Please keep teaching us!!

Whole flax seed passes straight through you, if it’s ground up it has great benefits for your body.
@Alexkpz8883 жыл бұрын
This is great info! I’m thinking he uses them for texture, will add both though, ground and whole 👍🏻
@rosalindpaaswell95132 жыл бұрын
@@Alexkpz888 I use ground, but I add it to the flour instead of the water, for the same reason he adds oats last: ground flaxseed absorbs water, like a sponge. And, FWIW, ground flaxseed in water is used as an egg substituted in vegan baking and cooking.

I've made this bread several times and instead of the seeds I use a quarter cup of Everything bagel seasoning. Wow,thanks Steve, you are a true inspiration!
@alejandrorivas45854 жыл бұрын
I mean you seem to have figured it out, but for anyone else, careful which bagel seasoning you use. Some brands include salt in the mix which can mess with your bake.

Flax seed is difficult to digest in its whole form. What if you ground it then added it to get its full nutritional value and not just pass through.
@annenyman6784 жыл бұрын
Jocelyn Doucette you have to grind up flax seed in order for the body to use it.

Well what a pleasant surprise. While looking for a German bread recipe I found your channel. I retired almost 3 years ago and miss the German bread I enjoyed during the many years I worked there. I will be making some of your breads shortly. I see a new cookbook popping up for my birthday.

I made it for the second time in 3 days, I used a Dutch oven from "The Pioneer Woman" which was on sale at Walmart for $20. It's a light enamel covered steel pot and worked perfectly for this recipe. I made the one with 2 cups bread flower and 1.5 cups whole wheat flower. Simply OUTSTANDING! It's THE best multi grain bread recipe and I love, love, love that there is no sugar in it. I let it rise for 12.5 hours the first time and 60 min the second time. After the 40 min with the lid on I let it bake an extra 10 min without the lid on. Thank you Steve and I will check out your other bread recipes!
