I too love your voice, John. I started watching your videos long before I heard of Sarah Millican. When I found out that she is from a town very close to yours and learned that you both have what's called a Geordie accent, I loved her even more! I, very recently learned Brian Johnson of ACDC is a Geordie as well. I have a keen interest in accents of the English language from all over the world.

My Granddad was a baker and I remember him, swathed in a huge white apron, making bread at home. I'd stand on a chair beside him and watch his hands create magic. Watching how you rolled and folded the loaf took me back in time - Granddad used to use an old cider jug (he wasn't a drinker and literally procured one to use for this purpose because it had a wider spread than the average rolling pin of the day!) to spread the dough evenly. He taught me a lot and you are reminding me! Thank you, John.

John, I have baked bread for a long time, and a while back I found your channel and let me just say your bread recipes and techniques are brilliant. Your slap and fold kneading method is so simple and effective! My wife is vegan, so I do not prepare any of your meat recipes but your breads are tasty and delicious. So any more recipes you can offer that skip the meat and dairy would be much appreciated. Thanks.

not to be Captain Pedantic here. but the expression "going commando" is incorrect, it should be "going Regimental" and it pretains to certain Scottish Highland Regiments, not commando's. Me late uncle was a British commando during WWII and royally pissed when he heard that expression late in life, he said we didn't go without underwear under our battle dress, that was those crazy Scots and their kilts......

I discovered your channel last week after wanting to start baking my own bread. I've made a few different breads and they've come out amazing. Today I followed this recipe precisely (even down to the same brand of flour and seeds) and I've never tasted bread this good! Even my husband said it tastes better than the seeded bread we buy. I'm never buying my usual seeded store bought bread again! This is the first time I've ever given a donation on KZbin etc and sorry it's not much but I just wanted to show my appreciation for your recipes and videos. Thank you!

John, I just wanted to thank you so much for this incredible recipe. We have been making our own homemade breads now for well over 4 years. We haven't bought a a roll nor loaf of bread from a Supermarket since. My Hubby really loves seeded wholemeal loaves and I hadn't found a recipe that I was happy with.....until your video came along. I made 2 loaves of this bread the other day and they truly turned out absolutely incredibly. I did tinker a wee bit with the recipe, as my Hubby stopped eating anything with sugar in it (even natural sugars like honey) years ago but he doesn't mind a "wee bit" to feed the yeast in his bread. But honestly, this recipe is THE BEST wholemeal seeded bread recipe I have ever tried......and after all these years of baking bread, I've tried a few awful recipes in my time, teehee. We were so surprised at how light and fluffy the bread is for a wholemeal loaf and it stays so fresh for days and days. It didn't dry out at all and my Hubby was even delighted to eat it without butter as he said it wasn't needed..........but as an Irish woman with fantastic Irish butter on her doorstep......I had to use butter.....it would be rude not too, teehee. But that was just personal preference. Honestly, this bread is so delicious. And it freezes so well too. It's been added to my weekly bread making repertoire. A massive thank you again John. Lee :)

Nice recipe, thank you. I often make soda bread with a seed mix on the outer surface. However, as the soda bread needs to go into the oven as soon as it is kneaded, I butter the tin quite heavily, make sure the seeds mix stick on the buttered tin, then put the dough in the tin, score and bake immediately. I get same result. :)

Hello John, hope you and your family are well. I love your channel, it's my go to channel for baking, I've purchased some things from you too, which have served me well. I'm going to make this wonderful loaf, but before I do, I wondered why the total flour weight is only 380g for a standard 2lb loaf tin. I would rather make a larger loaf with a total flour weight of 500g. I can recalculate the recipe, but if for what ever reason this type of loaf requires less flour, I will stick to your recipe. Your help would be extreemly appreciated. Keep up the excellent tutorials, you are one of the best teachers on KZbin and your receipes are spot on!

Nice one John. 👍 It's a Wheatmeal loaf though. Wholemeal (in the U.K.) means 100% of Wholemeal flour. Wheatmeal is the term used for a bread which has white flour in it too. It's an important distinction lest folk confuse the two on supermarket shelves. It is all getting a little confused these days by American Bakers. The U.S. has no convention (food regulations) on this. Small matter. I hope you don't mind me mentioning it. Great video and a lovely loaf.

Hey John! I'm back again. I was looking for a mixed grain bread baked in a rectangular loaf pan. And...here you are with another amazing recipe! My question is, I only have bread flour that is 12.7%. All Purpose white at 11.7% & whole wheat flour. I have no spelt or rye. How should I break this into 2 flours only as I do not want a dense loaf of bread? It's my mother's 87th birthday this week and she loves multi grain nut bread. So this will be a surprise for her. As always, thank you so much. And I LOVE my skeleton gloves and other items i ordered from your store. Now, when my timer goes off, my husband says John is calling! Lol

I have a recipe for a sticky date loaf that says to use a 2lb tin. My loaf tin only has measurements in cm and inches marked on it so I didn't know if it was the right size. I do now thanks to your video. 😁 My son bought me the cake cutters and pie tins from your Meat n Potato pies video for Xmas. The cutters are already coming in very useful. 😁😁

Thank you so much for your wonderful recipes, and most of all for advice. I was struggling along to make any sort of yeast bread- turns out my yeast really was half dead! A victim of supply chain delays I suppose, though it was within the date stamped on the bottle. I'm going to see how hard it is to order the skeleton gloves and more! Happy New Year, John!

John, I’ve tried your recipes and you are spot in when saying they are perfection. I need some help to make old fashioned raisin bread. My grandmother made it. Oats and molasses… cinnamon, nutmeg, ginger, cloves…raisins. It was the best I’ve ever eaten!!!! I have the recipie here from her book but after trying several times, it doesn’t rise to light airy texture and is heavy as a stone…. You’re a baker and probably could help me sort this? Maybe print a recipie like that on the site for everyone? Please help!!!!!🥰❤️🇨🇦👍🏼

Hi Mr. Kirkwood thank you for sharing this recipe with us! Would you mind explaining if it is necessary to include white bread flour, or can we possibly use 100% wholemeal flour? Or does it negatively affect texture or taste if we do?

I tripped on to your channel while looking for a Multi-grain seeded bread to make. I am definitely going to try this John, thank you! You sound so sweet and I'm a sucker for the lovely British accent! Reminds me of my years spent in the Air Force stationed at RAF Alconbury years ago in East Anglia. Tell me Sir, how would I modify this for a Bread machine? I assume it needs to be wetter right?

@@JohnKirkwoodProFoodHomemade - I made this recipe the hybrid way. I used my bread machine for the kneading and then baked it in the oven in a bread pan. It rose quite well, but the load came out a bit "pale" looking. Although it appeared to be cooked all the way through, it still had a bit of yeasty smell and just tasted not entirely cooked and yet I baked it for 45 min...hehehe. I'm not entirely sure what I did wrong, but I suspect too much yeast and water (or milk in my case). I had read that whole grain bread recipes with whole wheat flours need a tad more yeast because of their high absorbency. But I guess I'll try a little less this next time. I had put a bit more yeast this time because the first time I baked it in the bread machine, it came out super dense and just not risen enough.
