Thank you for the recipe, Grace. I made this using NZ King Salmon bones, trimmings and head. I added some pineapple pieces to lighten the gravy and add some tang. Truly heavenly !

Asam pedas is my favourite seafood dish ever!! I live overseas too and it's hard to get torch ginger flower here, which to me is essential in making an out-of-this-world version of asam pedas. Malaysians don't know how lucky they are, being able to eat this dish any time they want.

in my hometown ( west sumatra ) we usually add holy basil for extra fragrance on the dish and we call it Asam Padeh. thank you for sharing this video

in Malaysia we don't use basil (selasih/kemangi) and bay leaves (daun I forgot the name) ... mostly we use serai or pandan for aroma sometimes daun limau purut or bunga kantan or daun kunyit. that's the diff between Malaysian and Indonesian cuisine. we also use a lot more dry spices or a mixture of wet and dry rempah.

If I'm not mistaken, Indonesian call your asam keping as asam kandis. You can buy it in germany at indonesian store such as Toko Indonesia Hamburg, Toko Indomarkt Berlin, Toko Bali Munich. Or, if you have a chance to visit Netherland, Amazing Oriental is best choice to buy asian ingredients that we can't find easily in Germany. I love your channel and recipes btw

Anyway, asam keping and asam kandis are very similar but are actually different. Asam kandis has a much darker colour to it and the fruit is smaller than the fruit of asam gelugor. I'll try asking if Indomarkt berlin has it. Who knows, I might be lucky ;)

Looks good. The ladyfingers look similar to okra. In North America ladyfingers refer to a type of sweet thin biscuit or cookie, so that may throw some viewers off.

Looks amazingly good. I have to google a couple of the herbs that I have never seen in my life. Once you prepare the base soup, it looks like it will even be good with shellfish. Looks similar but richer than Tom Yum. Thank you.

I usually will cook with sliced pineapple in addition to okra and eggplant. It makes the dish more appetizing and wholesome. The pineapple preferably is 70% ripe and is to be fried with the rempah for a few minute after the rempah is almost done. Take care not to over-fry the rempah as it will produce a bitter taste when overburnt. The role of the laksa leaves is quite critical for ikan asam pedas . Without it, the dish will taste less authentic. At least to me.

I made this yesterday but it was a bit salty. The fish I had was slightly double the weight of yours so I doubled the spices. I think the belachan I used was really salty kind. A bit disappointed with my effort. Will try again as assam fish is my favorite
