Ragnarok had happened many times before, the Asgard we see in the movies is not the original Asgard. As for the water and atmosphere spilling off the sides it gets collected by Asgardian tech on the underside of the disc and recirculated. It depends on their population both after Infinity War and Endgame, with the upper estimate at around 1.5 million at the high estimate to as low as a few thousand. It would take years to rebuilt, but over time new Asgardians would be born and perhaps grow up and turn the small fishing town of Tonsberg into a bustling new city, New Asgard which was seen in the comics.

Only half the ship, if you look at the Statesman in Thor Ragnarok and the ship at the beginning of Infinity War you realize that it's only the front half of the Statesman. This makes sense as Thor says in Infinity War that Thanos killed half the Asgardians. It also explains why Valkyrie, Korg and Myck weren't there. It is also the basis of the Hulk was really Loki theory, placing Banner on the other half of the ship... even though Banner had no emotional attachment to Valkyrie... but also shows little to Natasha when they meet back up.

I've seen a lot of comments about all the Asgardians being killed at the beginning of Infinity War. I suggest people rewatch Ragnarok and Infinity War and pay close attention to the appearance of the Statesman, the ship used as the Asgardian refugee vessel. Only half the ship was destroyed by Thanos, if you look at the Statesman in Thor Ragnarok and the ship at the beginning of Infinity War you realize that it's only the front half of the Statesman. This makes sense as Thor says in Infinity War that Thanos killed half the Asgardians. It also explains why Valkyrie, Korg and Myck weren't there. It is also the basis of the Hulk in Infinity War was really Loki theory, placing Banner on the other half of the ship... even though Banner had no emotional attachment to Valkyrie, Hulk did. Banner also shows little emotional attachment to Natasha when they meet back up. Banner could just be an emotional mess which is probably true no matter where he really was.
