I used to live in White Bear Lake, but the job moved me to sunny Tampa Florida, but how I remember cooking in the bone chilling cold on the patio! Your ribs look marvelous!

Gotta love a smoker that doesn’t care what the temp outside is. I’ve got the thermal blanket on my pitboss at that has worked well for our MN winters.

I no what you mean, one day here in AZ, the day time temp hit 50 degrees, had to put on pants to finish the cook!

Thanks for the video. Smoking two racks tomorrow. -8 !!! Hate to do this to you but it is 55 and sunny here in Central Texas (Waco area). However, I really admire and appreciate your dedication to your craft. Thanks again.

I literally just did the exact same rack with the vinegar sauce. I let it tack up for 10 minutes after I unwrapped them. So dang delicious.

Those ribs look great as always! I gotta try that Tennessee Red, I got one of those sample bottles from Walmart. I got the Smokey Mountain also, and it's very good. Once the weather breaks, I have to get to my closest Ace Hardware to order me up some Ash Kickin Honey Chipotle!!👍

What knife did you use for trimming up the ribs?

I have stopped wrapping ribs. 1 & 3 only. Wrapping over cook. I do the bacon rain now instead.
@AshKickinBBQ9 ай бұрын
I don't know what bacon rain is, but rock on!
@Appytail9 ай бұрын
@@AshKickinBBQ What you do, on the top grill, you built a roof of bacon, sliced 2 to 3 times thicker than what you find at the grocery. It allows you to cook few degrees higher without drying those ribs. Because those ribs are constantly moist by the fat of the bacon rendering and pouring on the ribs. The fat that you cut out of the rib, you put it there on the top of the bacon roof. Underneath the ribs, on a pan, you slice 8 cubing inches of shortening (pork fat) that will "evaporate" underneath the ribs, and absorbs the smoke. My ribs are around 1 inches above that shortening bath. If you still want to wrap, use that melted shortening instead of butter ... By the way, after 4 hours, smokey and sliced bacon taste awesome.

What kind of knife is that?
@AshKickinBBQ Жыл бұрын
The one used to slice the final product is a messermeister. The one used to trim is a cheap boning knife.

@@Wyattduck55 any Ace Hardware is able to order it, and Scheels also has it. Not sure if that helps. Unfortunately shipping costs are out of my control.

Looks good but no smoke ring. Try this cook on the akorn auto kamado and it will be the best ribs ever with more flavor.
@AshKickinBBQ Жыл бұрын
You must need to put your glasses on this morning. There is 100% a smoke ring there 😂. I’m sorry if you’re having trouble seeing it. And no, the Akorn Kamado is nothing compared to the Lonestar Grillz Pellet Grill, sorry to burst your bubble. Have a great day 👍🏼
