PS1: I think chalot is easily growth in tropical places so very hard to find in western country PS2: Coconut milk is essential in any thai curry. if any asian or thai store don't sell it you F*** UP PS3: No snow peas in Thai dish please Haiyaaaa PS4: Normally i don't put MSG in Thai curry but since it uncle roger soulmate so..... fine i give him that PS5: Good Thai restuarant must be thai family run restuarant or street food. No big fanschise restuarant PS6: Pounding normally take 15-30 minutes in order to make fine paste PS7: Son in law egg is very delicious dish but not many thai restuarant in foreign country sell it. I very recommand you to try it, when you have the chance :))

glutamic acid is an amino acid used to produce proteins in body and it has a role in immune and digestive system including brain health. It is synthesized by body in abundance and is an excitatory neurotransmitter that trigger neuron action like dopamine or epinephrine. MSG is monosodium glutamate which is the salt version of the above basically binding the acid to salt so we can use in cooking. reason for this is unlike normal salt which is just salty and is flavor enhancer to certain extent, MSG is less salty since lesser sodium and is more flavor enhancer. the glutamate excites the tongue taste receptors (taste buds) which impart more umami taste especially to meat and other savory foods. Most of harmful effect news about MSG is false information, there are people who are allergic to peanut and gluten similar thing occurs with MSG with certain people, the rest of us can eat as enhancer in small amounts. Too much of anything is bad for you.
