You have *actually* impacted the way I approach cooking. Having never really cooked with my parents, I had to learn by myself via the internet, and, being a perfectionist, I became super anal about everything, to the point that it could ruin the whole experience if something went ”wrong”. I think a component that had been missing in the cooking videos I watched was precisely the emphasis you put on ”cooking in the real world, for real people”, measuring by eye and tasting to adjust. And that sometimes things go wrong, and that’s fine; it can still be a delicious meal.

The guy who got us into serious cooking was moving just a stones throw away from where we were moving at almost the same time. People have this idea about it they feel is very concrete, despite having never been there. It's such a beautiful part of the country with beautiful people, your explorations into Maryville and Knoxville proof of that! Two oven thoughts: Our GE goes to 11, er, um, 550... but since we meter it for the purpose of cooking a standing rib roast with the "let it coast" theory of finishing, we know that it's *really* hard to get it past 500, even set to 550, no matter how long you're willing to wait. On the "True convection" front, I would assume that means that it does not heat the elements in the oven for radiative heating, it *only* heats the moving air.

He headed directly towards the drop and I watched as I thought he would drive straight to a terrible death. Luckily, he awoke (I assume) just in time to pull himself back onto the highway. Of course, he exited at the next opportunity, I'm certain to get some coffee. I was a nervous wreck because of that and it has been a lasting memory.

Hey Adam, I think I might have the answer to your oven modes question. I worked for GE Appliance in the cooking division working with electronic controls. So I can at least tell you what their modes mean. I’ll start with normal Bake. Normal Bake uses both the bake (lower) and broil (upper) element to cook. With very heavy preference to the bake element, depending on the model, something like 80%-90%. For broil the upper element is the only one used and for GEA oven Broil HI is shooting for a temp of 550F and LO is like 475F. Convection bake uses the same elements as the normal bake setting but runs the convection fan also. So ovens a special and have a third element in the rear of the oven behind the convection fan. I am guessing that the pure convention mode on your current oven is like the convention multi-rack that GEA ovens have. In that mode only that rear element will be used once the oven is pre-heated. Because they are typically smaller elements the two main ones will be used during pre-heat so you aren’t waiting an eternity. Hope this helps answer your question.

All my ex's live in Texas And Texas is the place I'd dearly love to be But all my ex's live in Texas And that's why I hang my hat in Tennessee Rosanna's down in Texarkana Wanted me to push her broom Sweet Eileen's in Abilene She forgot I hung the moon And Allison's in Galveston Somehow lost her sanity And Dimples who now lives in Temple's Got the law looking for me All my ex's live in Texas And Texas is the place I'd dearly love to be But all my ex's live in Texas And that's why I hang my hat in Tennessee I remember that old Frio River Where I learned to swim But it brings to mind another time Where I wore my welcome thin By transcendental meditation I go there each night But I always come back to myself Long before daylight All my ex's live in Texas And Texas is the place I'd dearly love to be But all my ex's live in Texas And therefore I reside in Tennessee Some folks think I'm hiding It's been rumored that I died But I'm alive and well in Tennessee

Welcome to TN! I moved here from the Midwest and really like it here. Dove in to some of the local history and made a few videos about such. One fun fact...the father of Oliver Hardy was in Knoxville during the siege of the town during the Civil War. Fort Dickerson has an interesting story as well...including the life of Jonathan Calvin Dickerson whom the fort is named after. Every place has history...both good and bad. Cheers!

About the first question... I get it ALL the time. When I inform someone I am from southern California, they look at me wierd and say something along the lines of "Why did you move to the south, especially to a military/college town?" (I live in Pensacola, Florida.) It's become a reflex to basically just go "Cost of living, plain and simple." as a short response, and then I'll say "Military personell come and go, and so do college stusents. Due to that, permanent residents-wise the city doesn't have many people, so the cost of living is cheaper." if asked to elaborate (usually only older folks ask). Wasn't always that simple though. Been here for almost 7 years, and in the very beginning, it use to be SUPER annoying.

When I make pizza I found putting some olive oil on the dough then baking it for a short time before putting on toppings makes a better cooked crust in the center. I haven't tried cooking the pizza just on parchment paper after taking it out of the pan, I'll try that next.

Thanks for the tip on vhino verde. I had never heard of it but I went and got two different vintners offerings from my local grocery store (the total for both bottles was US$16.) OMG! I so understand this. When my wife and I announced we were moving from the Seattle area to St. Louis we received a resounding, "Why?" from nearly everyone. For us it is simple - economics. We cannot afford to remain in this area, despite having been lifetime residents of the PNW. St. Louis is cheaper to live in and is still a city. It is also not the rest of Missouri. And, the real kicker is, I have family there. Family that both my wife and I would like to be nearer to. Who knows, I might actually be able to retire in that city.

Cuz the wine is what I care about- the Starfish bottle is Starborough Sauvignon Blanc from Marlborough, New Zealand. I got my bottle at Trader Joes, but it's apparently common enough, HEB, Safeway, Target, and Walmart carry the bottle, too! Not too sweet, not too dry. Nice mouthfeel. DEFINITELY will buy it again.

One strong recommendation for folks in or near eastern Tennessee, at the end of January they have a science fiction & fantasy convention called Chattacon, held at the Chattanooga Choo Choo Hotel (yes named after the famous song) in Chattanooga. If you're from out of town, you can book a hotel room, or a room built into a railroad car. The convention folks are very nice (I got to be a guest writer of the con in the past), too. While you're in Chattanooga, you can also visit the Tennessee Aquarium, which is 2 four-story buildings, one of which is a self-guided tour from the top of the Appalachians down to sea level of all the freshwater systems on the main river, and the other is a four-story-tall saltwater tank (accessible with an elevator to the top and gentle ramps all the way to the bottom of each building).

Born in NC, raised in Knoxville myself. Got out while the gettin' was good, as they say. Live in Australia now and love it. We just didn't want to raise our kids in such an insular environment, didn't want police at the doors of the kids' schools. Knoxville is a bit better than say middle and west TN when it comes to diversity and anti-racism, but there still aren't very many truly anti-racist, non-conservative, non-religious, lgbtqi+ accepting pockets. The kids at our kids' primary school here in Australia were so diverse there was representation of 12 different languages (in less than 200 kids) and even more countries - definitely not something I'd have found where I grew up. Love your work, though. Hope y'all find living there better than I did!
