hi friends! welcome to my new series where i try to get better at baking with lots of practice.
i am so excited to kick off this series. as some of you know by now, i LOVE baking but i am not very good at it lol. i am gluten free and try to eat as clean of ingredients as possible, so baking yummy treats that mimic the original creations is definitely more tricky. join me as i test recipes and try to improve my skills. lmk what kinds of treats you would like me to bake next.

ingredients:
3 cups (380 grams) gluten free flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon fine sea salt
2 sticks (227 grams) unsalted butter, at cool room temperature (67°F)
1/2 cup (100 grams) unrefined coconut sugar
1 1/4 cups (247 grams) date sugar
2 teaspoons vanilla
2 large eggs, at room temperature
2 cups (340 grams) semisweet chocolate chips
1. in a medium bowl, combine the flour, baking soda, baking powder, and salt.
2. in the bowl of an electric mixer, beat the butter, coconut sugar, and date sugar until creamy. add the vanilla and eggs. gradually beat in the flour mixture. stir in the chocolate chips.
3. if time permits, wrap dough in plastic wrap and refrigerate for at least 24 hours but no more than 72 hours. this allows the dough to “marinate” and makes the cookies thicker, chewier, and more flavorful. let dough sit at room temperature just until it is soft enough to scoop.
4. divide the dough into 2in sized balls using a 2in cookie scoop and drop onto prepared baking sheets.
5. bake for 9-10 minutes at 350 degrees, or until golden brown. cool for 5 minutes before removing to wire racks to cool completely.
