"This candle is about to burn my house down." Insert "This is fine" meme. Anyway, want to impress people with your curry? Take a mortar and pestle, add standard curry powder (yellow) around 80% the desired amount, 10% madras curry powder (brown), 5% ginger powder, 3% cumin powder and top off those remaining 2% with chili seeds. Crush the mixture and mix it evenly until it is a slightly shade darker than the standard curry. Set that aside. Boil the desired amount of onion in just enough water to cover the onions and do this open so a good portion of the water evaporates. Dump the translucent onions in a blender with the water. Blend it until you have onion soup, creamy and even. Take a pot with just a little sesame oil, enough to lubricate it. once the oil lifts, pour the onion soup and reduce to low heat, you'll want to cook this slowly, if it starts bubbling too much at this stage, you're doing it wrong. Add enough ketchup to render your mixture a light salmon pink hue. Carefully add the curry powder so that you get an even mixture with the onion cream - Mixing the powder is difficult because of the temperature, it will attempt to clump. Use a whisk. Now you can set the fire to medium. Immediately drop the desired amount of coconut milk and mix slowly until it is even. The final mixture should be left at medium heat to reduce the mixture slightly (around 5%, you'll get a visible band of residue around the mixture, scoop that up and mix again), you want your curry to attain some mild thickness to it. When it feels sufficiently creamy, reduce to minimum heat and let it sit for 30 minutes on a closed lid (no bubbling). Add whatever ingredients you want, from boiled vegetables, to chick pea, meat, fish, prawn, boiled eggs, doesn't matter, whatever you choose will work. Leave this in slow cooking around 60ºc for an hour or more (more is better with these kinds of dishes). Serve with basmati or thai rice, preferably steamed, the fried pappadums and some additional indian snacks. My go to is a diced tomato and onion salad with a pinch of tabasco and salsa. This is my mom's recipe, she's passed away but I'm its custodian now. So if you do this, remember to thank Silvana, because when she made this, it always a party. And I can confirm, it really does impress people.

People don't care that I generally cook good stuff overall because what they always ask is "Oh, it's gonna be curry, right?". You will master the perfect texture for that dish and you will rise in status as a result, that's a promise ;)
