@@tweedledee-z5cclean hands are typically more hygienic then gloves. gloves are better for protecting the person wearing them then protecting consumers. as long as they are washing their hands properly i wouldn’t be worried

As someone in this field myself, I am so happy you are showing the process, how labor-intensive it is to hand-make confections, and so folks have a better understanding of the difference in cost between that and a mass-produced candy bar or whatever. And I got MY ASMR from seeing the attention given to getting every. damn. drop. of your raw ingredients out of the bowl/off the bench scraper, etc. Drives me NUTS when I see folks wasting. Get IN there with that spatula!

18:10 Scooping the creams out of the starch, dropping them into the grate container, then (after brushing them off) pouring them onto the tray. That was my favorite part. 2nd favorite was while the “A”s were being decorated onto the chocolate covered creams, someone else was doing something else off screen, and the sound of whatever they were doing off screen was nice, unrelated, but nice. 😂

Put a screen on the bottom of the powder sugar trays under the sugar, then all ya have to do is pull up the screen and they all come out at once

This makes me wanna make some candy. I love divinity, and I love the process of making it and watching it fluff up with the egg whites and it just tastes so good with that cherry jello mix, or any jello mix for that matter, or none. But I like the cherry. I wanna work at a candy store haha. I love making candy and baking. Also when you sent the candies under the chocolate on the conveyer belt I was instantly reminded of that episode of I love lucy with the chocolates hahaha 😂 such a classic.

Amazing work and beautiful creams well done, all was good until the packaging part, wonder if the counter top was wiped off from the eraser pencil fragments before setting the metal candy tray on the counter and placed back into the rack above other candy, did I see right the tray was on the administrative work counter, sort of like packaging something sterile in the garage full of dust, shedding hair etc.

QUESTION: I have enjoyed your videos. Fascinating to watch the timing and rhythm of it all. One question, why do you hand form the corn syrup balls rather than just pour a specific weight of it into the cooking bowl like sugar? It all gets mixed together, so I am unclear the reason for that initial step. Thanks.

They said it’s too thick for pouring and scooping it by hand instead of using a utensil creates less waste in the long run.

@@colorcrunchasmr correct! the same rules apply to making this sort of thing at home. however in this specific instance, the recipes are all based on the original "hand measure" recipes. they explained that part in other videos.
