Sometimes, when I'd be leaving at 2 am from the pizza store I managed, we'd take over a few to the donut shop next door and get warm, fresh donuts. Pretty fair trade!

My goodness, what a labour intensive job. I would never have considered the amount of machinery, physical labour and time it takes. I have seen small street vendors, making doughnuts while you wait and that was pretty fast. Thanks for the insight.

Health violations. But the shop is warned ahead of time before any inspections. Also, when an inspection is scheduled, employees without green cards call in sick that day. I know, I worked for a union bakery on the west coast that was a hundred times larger than this. And yes, we had to wear nets on hair ,and over beards.

When I was 14 I worked at a donut shop. I would make the donuts at night with the franchise owner (breaking every labor law in the state of California for a 14 year old kid). It was a fun summer. Sometimes I would make the donuts all night and then sell them the next morning for a double shift. I still love donuts. I know many of the tricks in the trade.
