To add air into the mix, which will change color and texture. You hammer either to shake the candy off, as some had stuck to it in the past, or to keep it attached to the wall mount.

if i remember right, when you finish with the hook, you hit it with the hammer to release any crystalized bits of the candy which were sticking to said hook with the vibration of the hit? the bits sticking to the hook is what makes it difficult to take it off when the stretching is completed.

Can you “over hook” the candy? What happens if you do? Also, when the drops break, what happens to the candy dust? You throw it away?

It would just get too cold. And unfortunately yes, we do. People have said they would like to buy it from us, but unfortunately it very quickly all sticks together with a rather unappetizing and sticky texture, so for that reason we throw it all out

Why do you use these cooling tables instead of a marble table like some other candy makers do? To me, a complete outsider, it seems like you have more control of the cooling process with marble. Genuine question.

Actually you have significantly more control with a cooling table because you can run water through it of whatever temperature you want to heat it up or cool it down whenever you want. Marble only really cools down and heats up based on the previous batches and how you're using the table during the current batch.

I think the ratio affects the texture and gloss. Just sugar would be much harder, more difficult to work with, and less glossy

He can bare hand the corn syrup because of the very high heat the candy will go through. I was a food inspector and looking at one operation with these big copper drums that rotated small candies to make them smooth with adding wax noticed the operator bare handing the candy to feel if the candy was done. He was upset when I told him he needed to wear gloves. He was right in that touching the candy was the best way to tell. So instead we decided on a small scoop to take a sample for feeling, then discarding it. It's no fun telling someone that knows his job and has been doing the same thing for dozes of years that he has to change but that's progress.

It's amazing how many times we touch our bodies without noticing. I counted twice that she touched her hip and forearm, then back to the candy. 😮
