IMHO because he is traditional clay master. Make and use standardized parts for one batch of a product (or maybe throughout life) is a sign of the master, makes his things unique and recognizable.

Yes, the ones made of that clay are heat resistant. This clay is suitable for making kettles, pots, etc.
