Great video !! Wish I would have had it available when I picked up my Dauntless evaporator four months ago. I painted parts that I should not have and the hint on using the nickel and dime spacers would also have helped. Luckily I took many photos in the showroom of a Dauntless on display and assembling went well. I’m looking forward to the 2020 maple syrup season to fire up my new evaporator. Love that it’s 100% made in the USA.

Angela & Jim, With our Dauntless running a flat pan we hit 12.9 gals. per hour this 2023 season. Running nice and shallow just over 3 gals in the pan, using the sightglass to keep tabs on sap levels. This is our 4th season running the Dauntless w/flat pan. Love this unit. 52 taps this year adding 5 more next year.

Maybe I missed but we are nearing the end of assembly.-Do you have any recommendations for an ash pan?

What is the downside of not painting? I ordered without paint and I’m itching to start assembling

It can rust, and definitely eventually will rust. However, you can paint it after assembly if you wish. The downside is that you won't have the visual appeal of the bright contrast of the of the bolt heads.

Evaporator looks great! Thank you. I was wondering though… what would be the down side to running it at like 4-5 inches versus the recommended 2inches?

The evaporation rate drops significantly, too much energy is used to maintain the extra sap's heat. Remember that evaporation only happens from exposed water molecules. The more splashing and spitting that occurs, the more evaporation that takes place. Also, in the case of a divided pan, it's not possible to establish the desired density gradient with such high depths.
