Great customer service. Years ago I emailed BPS after my first cook with questions. Owner emailed me back and recommended, top vent wide open on cook. Start with two bottom vents half open and try only adjusting the bottom vents while getting used to the drum. Worked like a charm. I pretty much know where to set my vents before starting a fire and it holds a very steady temperature. It's really easy to cook on after a few cooks to get used to your particular drum and fuel. Since then I've made everything from whole turkeys to beef brisket. Great deal.

If you use a heat tuning plate place it on the top U-bolts where you would normally hang the coal basket for grilling. This works out nicely 👍

I bought this kit and assembled a barrel smoker, its awesome! The kit is high quality and the directions are clear and precise. I was able to get my drum for free so that definitely helped offset the cost. I also made a hanging ring that I can use to hang food with hooks, works great.

Brian, for a quarter of the price and a little bit of planning you could built a similar USD that will perform better. Paying their outrageous prices for something that can easily be found at your local hardware or big box store goes against the philosophy of the folks who came up with the original USD.

Make sure when you get a barrel that it is standard size. I got a food grade barrel and it was not as big and made getting some of the parts on a pain.

Great point. Our DIY drum smoker kit is built for a standard 55 gallon size, but we've seen people adapt it to 30 gallon and even smaller drums for tailgating.

So if I want to smoke a brisket for 10 to 12 hours how do you go about adding more charcoal? Or does the barrel stay hot all 10 to 12 hours without adding more coals?

I read online that 12 lbs. of charcoal will burn roughly 20 hours..... Not sure how much truth there is to this but your only cooking at 225ish so maybe??

I've cooked an 11 pound brisket and 10 pound pork shoulder roast and used just 8 pound of charcoal briquettes and it lasted 13 hours keeping the temperature at 225

Most people use pallets and get it super hot make sure you have your inlet holes drilled or it wont work

+boyd maher Be very careful burning pallets in your smoker. You must, and I cannot stress this enough, must make sure you use NON PRESSURE TREATED pallets. If you burn pressure treated lumber you risk leaving toxic residue in your smoker to be burned off when you smoke your food in it. Check online for how to make sure the pallets you are using are not pressure treated.

Jesus, $140 and you gotta build it yourself (and buy a drum seperate). A little know how and an afternoon you could build the whole thing for half the price or spend an extra $100 and buy a finished smoker and start cooking right away.
