I love Gastro Obscura so much! We have actually been searching for the secret to these meatballs for a long time now, we hope we can replicate them! A very well made video, and a beautiful process to make the meatballs.

When meat is pounded into a paste, and is that bouncy, I imagine the texture would be like hotdog meat. Hotdogs are just about the bounciest meat I've come across. Incidentally the meat inside is reduced into a paste.
