Hey Mike, I'm sure someone already told you this, but just in case... I worked in a sandwich deli after high school where we made our own bread, to get those pretty score marks on the top the trick is to lightly score before the final rise, the bread will always collapse if you try to score it after. Edit: I think that lamb and barley stew needs a video! It looked delicious!

I really like how the titles and thumbnails of these videos give nothing away. Makes it feel much more like a real advent calendar, not knowing what I’m about to unwrap!

If you don't have a handy warm cupboard for the dough to rise in you can make a substitute with a microwave oven. Heat a jug of water in the microwave until it's very hot, leave the jug in the oven to keep the oven cavity warm then put your dough bowl or bread tin in the nicely warmed up oven. Don't switch it on.

Useful tip I wouldn't have thought of, so thank you. I've been using the microwave light, putting a tea towel and long oven glove over the opening of the almost closed door and that seems to work too.

If oven spring is something that you are missing from your bread-making-escapades, I would suggest increasing the hydration of your dough. Many factors are involved in oven spring, but I think one of the things that are happening to your loaf, is that it is too dense/heavy for the loaf to significantly rise before forming the crust. Maybe you could try to do an experiment with different hydration percentages on the same bread recipe? I always find that more water results in a more moist loaf (what a surprise...:) ), but it is of course also a lot harder to work with.

Correct. Additionally a bread with lots of additions won't likely have a strong enough gluten network to really hold onto the steam.

The punny math nerd in me always appreciates seeing the Breadsheet show up in a video! I think this is the first time I've actually seen someone explain what the "tiger" part of "tiger bread" is beyond the actual pattern itself. Knowing how relatively easy it is to do, I might end up trying it myself on something with a higher crust-per-bite ratio like buns or kaiser rolls or something of the sort. Also I've been loving how cozy and comfortable the advent calendar has been. Thank you for making these and the privilege of letting us into your life like this, they always make my day better.

I'm not much of a bread eater, unless were talking about freshly baked. Watching that creation has me practically drooling. The recipe looks and sounds like Heaven. I'm grateful I can't smell it, that would be too much! And OMG, with lamb stew!!!!!!

I spent close to an hour only yesterday lugging my new breakmaker back from the shop, with many repositioning-of-the-box stops, and now I discover that the practice of the breadmaking needs a spreadsheet. Gives me something to do while this storm rages outside this weekend! :)

I've been getting into baking over the last month or two, experimenting lots. I used to have the same issue with the bread not rising much in the oven and the slashes on top not doing much. I found that this is caused by over prooving, and that if you do the final knock back and let it sit and prove for only around 20 mins or so before it goes in the oven, it will rise a little while proving but a lot more when it goes in the oven. You'll end up with those cracks in the crust you wanted and a lighter bread with a nicer crust. That's what I've found anyway.

Thoroughly enjoying this style of advent. In regards to your bread and oven spring, try baking without the fan in your oven. I get much better spring with the fan off.

Yes, the fan tends to set the outside too quickly, defeating the point of the water pan.

It's also got a lot of additions without much kneading. So it's Gluten structure isn't super strong to really hold onto shape for the oven spring.

Whenever you add flax seeds to your loaves, it makes me think of Debussy's 'Girl with the Flaxen Hair', which I learned to play on piano a number of years ago. Makes the video even more relaxing having that beautiful piece of music running through my head while watching!

My dad used to make bread. It was either enormous and like cotton wool, or the size and consistency of a house brick. Either way, he never admitted defeat and ate all of it.

That's nice looking bread, but a bread I like to make around Christmas time is cranberry/walnut bread (I add dried cranberries and walnuts and caraway seeds) and I make it with 50% regular bread flour and 50% wholemeal. It looks very Christmassy but doesn't taste too sweet

if you want move crackles on top, try putting the tiger paste in before the final rise. it works best in a humid proofing unit so it doesnt dry out too much. this is how we made our tiger topped products in the bakery i worked in.

I will never understand the levels of self control to be able to prevent yourself from mauling the delicious fresh bread when it's straight out the oven and smells amazing. It also tastes amazing and would melt that butter for you.

Dang, loved the cracks that the bread formed on its crust. The plating for the meal at the end looked awful nice as well, and it just made me wish you had also shown the preparation of the stew. :D

This bread really reminds me of a local specialty here in San Fransisco called "Dutch Crunch" where as they brush a starchy paste atop bread before baking, which makes it live up to its name. So good.

The Topping is the same. It's called Dutch Crunch because Tiger bread is common in the Netherlands.

Have you tried cutting the slashes in the top then letting the bread rise for a bit after? Normally that would make the slashes open up way too much, but since yours don't open up at all, it can't hurt, right?

Hey, a couple of tricks to get your bread to score better: 1. make sure the top of the bread is dry, ie don't cover it as it's rising the final time, that way the crust dries out a bit. It's easier to score if it's not all soft and wet. 2. Alternatively, don't score it, then put the bread in the over for 10 min, then take it out and score it. This will also dry out the top of the bread so you get nice neat score lines. 3. Most importantly - don't let the bread rise too long before baking! By the time you baked the bread it was already pretty much at it's final size. I've found bread doesn't rise quite as much as I expect. I'd say it's ready to bake when it's like 3/4 of the way up the tin, as it will continue to expand in the oven. That way when you score it, the bread has somewhere to expand to. If it collapses upron scoring, that means it was over-risen. Anyway your bread already looked amazing, just a few tips if you want to get it extra perfect lol!

Fantastic! This will be my next loaf. We had 5 bakeries in my area when I first moved in. Now they have all gone. There is NOTHING to beat hot crusty bread made at home.

Try slashing the loaf before it rises. That is what the French bakeries do. Its done partly to help the loaf rise,so makes sense to do it before it rises.
